About The Position

This is a dual-role position that combines the responsibilities of a Dietary Manager and a Certified Nursing Assistant (CNA) when needed. The Dietary Manager is a qualified supervisor knowledgeable and trained in all aspects of food service, including procurement, storage, handling, preparation, and delivery. Requirements

  • Certified dietary manager; or
  • Certified food service manager; or
  • Similar national certification for food service management and safety from a national certifying body; or
  • An associate degree or higher degree in food service management or in hospitality, if the course study includes food service management or in management, from an accredited institution of higher learning; and
  • 2 or more years of experience in the position of director of food and nutrition services in a nursing facility setting and has completed a course of study in food safety and management, by no later than October 1, 2023, that includes topics integral to managing dietary operations, including, but not limited to, foodborne illness, sanitation procedures and purchasing/receiving; and
  • In States that have established standards for food service managers or dietary managers, meets State requirements for food service managers and dietary managers, and
  • Receives frequently scheduled consultations from a qualified dietician or other clinically qualified nutrition professionals
  • Certified Nursing Aide in good standing with the certification board or is a graduate of a state-approved nursing assistant training program and passed a state-approved competency examination (written and skills) within 120 days of employment
  • Must be able to express self adequately in written and oral communication and to communicate effectively in an interdisciplinary care setting with residents, families, and staff members.

Nice To Haves

  • High School Graduate/GED preferred.
  • Current CPR/BLS certification preferred.
  • At least one year of experience as a certified nursing assistant in long-term care preferred.

Responsibilities

  • Assess nutritional needs of residents.
  • Develop and evaluate regular and therapeutic diets, including texture of foods and liquids, to meet specialized needs.
  • Develop and implement person-centered education programs on food and nutrition services for all facility staff.
  • Oversee the budget and purchasing of food and supplies, food preparation, service, and storage.
  • Participate in quality assurance and performance improvement (QAPI) related to food and nutrition services.
  • Maintain a clean and sanitary environment.
  • Oversee safe and timely meal preparation, including provision of meals and/or supplements according to residents’ needs, preferences, and care plan.
  • Participate in interdisciplinary team meetings.
  • Recruit, interview, hire, train, coach, evaluate, reward, discipline, and terminate employees in the Food and Nutrition Services department.
  • Develop work schedules to ensure adequate staff coverage.
  • Monitor budgets for cost-effectiveness and manage revenue-generating services.
  • Use forecasts, food waste records, inventory, and equipment records to plan purchases.
  • Follow standards and procedures for preparing food.
  • Participate in menu planning, responding to resident preferences, substitution lists, therapeutic diets, and industry trends.
  • Inspect meals to ensure standards for appearance, palatability, temperature, and serving times are met.
  • Ensure foods are prepared according to production schedules, menus, and standardized recipes.
  • Manage the preparation and service of special nourishments and supplemental feedings.
  • Ensure safe receiving, storage, preparation, and service of food.
  • Protect food in all phases of preparation, holding, service, cooking, and transportation.
  • Prepare cleaning schedules and maintain equipment to ensure food safety.
  • Ensure proper sanitation and safety practices of staff.
  • Process new diet orders and diet changes.
  • Keep diet cards updated.
  • Complete assigned MDS sections according to the required timeline.
  • Determine resident diet needs and develop appropriate dietary plans in cooperation with a registered dietitian and in compliance with physician’s orders.
  • Review plan of care related to nutritional status.
  • Document concerns that can be resolved, improved, or addressed to improve the resident’s nutritional status and eating function.
  • Review, revise, and implement the resident’s nutritional assessment and plan of care in cooperation with the interdisciplinary team.
  • Support Registered Dietitian duties as needed.
  • Provide supportive services to nurse(s) and other staff as needed and perform duties as assigned.
  • Assist resident with or perform activities of daily living for resident in accordance with care plans and established policies and procedures.
  • Assist resident with lifting, turning, moving, positioning, and transporting into and out of beds, chairs, bathtubs, wheelchairs, lifts, etc.
  • Coordinate dining room services at assigned mealtimes, including set-up and clean-up, meal tray delivery, feeding assistance, and documentation of meal intake.
  • Deliver nutritional supplements to residents at assigned times and provide assistance as necessary to ensure intake.
  • Document intake accordingly.
  • Assist with weighing residents according to facility policy, and record weight in designated locations.
  • Report weight changes to nurse and supervisor.
  • Assist with tracking the condition of the resident’s skin.
  • Report any presence of pressure areas, skin breakdown or skin tears to nurse and supervisor.
  • Assist nursing staff in carrying out toileting program activities.
  • Complete flow sheets daily to indicate that the specified task was done.
  • Document the progress of each resident as directed by supervisor.
  • Keep nurse and supervisor informed of factors that interfere with being able to perform the work as assigned (i.e., resident refusal, reassigned to nursing unit).
  • Report changes in a resident’s condition to the resident’s nurse and supervisor.
