About The Position

Big Mamma is a French group of Italian restaurants founded by Victor Lugger and Tigrane Seydoux. In the last 10 years, they have opened 34 restaurants across France, Monaco, England, Spain, Germany, Belgium, Italy, the UAE, and Ireland. Their mission is to share the special atmosphere of the most beautiful traditional Italian places, creating unique moments of sharing with their customers. They are looking for the best Cooks to join their teams in Barcelona as Demi-Chef De Partie.

Requirements

  • Understanding of Food Cost
  • Basic knowledge of the group's artistic direction
  • Knowledge of hygiene and safety
  • Knowledge of cooking basics and techniques
  • Recipe reproduction
  • Fresh pasta knowledge
  • Ability to train junior staff
  • Onboarding skills

Responsibilities

  • Stock management, inventory, and understanding of Food Cost
  • Basic knowledge of the group's artistic direction
  • Quality control and guarantee of mise en place, knowledge of hygiene and safety
  • Management of the pass and service
  • Knowledge of cooking basics and techniques, recipe reproduction, and fresh pasta knowledge
  • Training junior staff, onboarding, and team motivation
