About The Position

The Culinary Operations Analyst is a key member of the Research & Development team, responsible for recipe management, operational standardization, program alignment, menu profitability, and store compliance across Eataly North America. This role partners closely with Culinary, QSR, Beverage, Hospitality, Product, Master Data teams to ensure recipes costing, nutritional information, and menu performance align with company standards and business objectives.

Requirements

Experience in Hospitality, Food & Beverage, Culinary Operations, or a related field.
Proficiency in Microsoft Office Suite, particularly Excel, Word, and PowerPoint.
Strong organizational skills with exceptional attention to detail.
Excellent communication and cross-functional collaboration skills.
Ability to manage multiple priorities in a fast-paced environment.
Adaptable, resourceful, and capable of responding effectively to evolving business needs.

Responsibilities

Partner with the Corporate Culinary Managers to develop, maintain, and optimize recipes across Eataly North America.
Lead the standardization and centralization of recipes for all restaurant concepts, QSR outlets, and prepared food programs.
Monitor and analyze virtual menu performance and margin trends, coordinating corrective actions with Culinary and QSR teams.
Support the development, costing review, and maintenance of RPMs (Recipes, Pricing, and Margins) for Restaurants and QSR.
Manage pricing updates for Retail and Restaurant POS systems in collaboration with Master Data teams.
Collaborate with the Director of Culinary and QSR, Product Team on cost-control initiatives and menu optimization strategies to support profitability and margin performance.
Generate forecasting, KPI, and operational reports to measure program performance, support business planning, and drive informed decision-making.
Manage ingredient substitutions, ensure recipe compliance with approved product catalogs, and implement recipe modifications in response to pricing fluctuations, product availability, or operational requirements.
Monitor ingredient cost fluctuations and partner with FP&A teams to facilitate pricing and cost updates within D365.
Support new menu launches, seasonal activations, and operational initiatives by ensuring recipe accuracy, costing integrity, and system readiness across all stores.
Communicate recipe updates, ingredient changes, and procedural modifications to store teams and key stakeholders.
Partner with Culinary and QSR Managers to develop and maintain nutritional information and labeling requirements for Pronto, QSR, and Fresh Pasta programs.
