About The Position

To provide residents with well-prepared nutritious meals served with individual thoughtfulness. This role involves preparing food, organizing and participating in the tray line, ensuring proper sanitation and safety measures, and performing culinary management responsibilities as instructed. The position requires working with geriatric residents and understanding their special needs, as well as having leadership skills to direct the dietary department in the absence of the dietary manager.

Requirements

  • Must be able to read, write, and perform mathematical formulations.
  • Plan work schedule for the day based upon the menu.
  • Meet meal schedules.
  • Must be able to work with, supervise, and secure the cooperation of fellow dietary employees in order to implement the meal.
  • Must work with geriatric residents and understand their special needs.
  • Must have leadership skills to direct the dietary department in the absence of the dietary manager.
  • Must be knowledgeable in weights and measures.
  • Must be knowledgeable in the storage of food products.
  • Must be understanding of sanitation and safety measures to meet state and federal regulations.
  • High level of proficiency and time management to meet meal regulations time.
  • Must have the capacity to operate commercial equipment.
  • Must be in good physical and mental health.
  • Lifting weights up to 50 pounds occasionally.
  • Stand, stoop, bend, and walk most of the day.
  • Calculation of special diet and special needs of residents.
  • Maintain mental alertness in order to accurately follow dietary menus and resident diet cards while managing time regulation.

Responsibilities

  • Preparation of food, including cooking cereal and eggs, preparing pancake mix or french toast mixture, preparing bacon and eggs, preparing sausage according to therapeutic diets, preparing food for special diets and requests for breakfast and dinner, starting food for the noon meal, cleaning and cutting up squash, washing potatoes for baking, washing and preparing fresh fruit, preparing dessert, preparing garlic butter, setting up cart for Pancake Day, pan french toast, preparing and pan scrambled eggs, pan bacon, sausages, and ham patties, and dishing desserts for each therapeutic diet using correct portion size for dinner and supper.
  • Organize and participate in tray line on a timely basis, including turning on necessary equipment, removing transported food into steam table, setting up steam table with proper utensils and pans, checking temperature of food items and recording, arranging salad, desserts, and special requests and supplements, fulfilling calls from intercom, organizing serving utensils for proper portion sizes, dishing foods according to therapeutic diets and special requests, storing all leftovers in proper containers, labeling, dating, and refrigerating, and assisting at noon tray line.
  • Ensure proper sanitation and safety measures are followed at all times, including recording temperatures in coolers and freezers, preparing food in a sanitary manner using proper food handling and hand washing techniques, maintaining a clean working environment, following posted procedures for safe operation and care of equipment, completing assigned cleaning duties, attending scheduled sanitation workshops, sanitizing pots and pans, emptying garbage cans and relining, and putting soiled potholders and soiled linen in laundry.
  • Perform Culinary Management responsibilities as instructed, including managing the department in the absence of the Culinary Manager, assisting in receiving and storing of incoming food and supplies, reporting food and equipment needs to Culinary Manager, communicating and cooperating with staff, residents, and their families, complying with long-term care regulations and written dietary procedures and policies, attending supervisory workshops, and replacing personnel in absence of scheduled employees.
  • Other duties as assigned, including diet memos, doing extra assigned duties for special events, and fulfilling special request forms.
