About The Position

The Riverside County Probation Department is seeking a Correctional Food Services Supervisor located in Indio. The incumbent will provide full-service supervision and scheduling of staff, including performance evaluations and shift coverage. The Correctional Food Services Supervisor will manage administrative office duties, process purchase orders, and oversee training to ensure compliance with the National School Lunch Program. Additionally, the incumbent will work closely with other institutions to identify and resolve issues, as well as maintain cleaning and sanitation standards to ensure the facility is fully prepared for inspections and other related duties as required. Requirements

Two years of large quantity cooking experience in an institutional, military, large commercial kitchen, or similar setting which has developed skills in measuring and mixing ingredients according to recipes and number of persons to be served.
This experience must have included a minimum of one year of supervising food service personnel.
Knowledge of the principles of supervision and training; fundamentals of dietetics; practices, methods and equipment used in preparing, cooking and serving food in large quantities; computer skills for creating, tracking and managing requisitions and purchases; behavior of persons in detention/ treatment facilities; sanitation methods in cleaning and maintaining equipment; practices of ordering, storing and inventorying large quantities of food; common weights and measures; occupational hazards and safety precautions of kitchen areas and equipment.
Ability to direct the food service operations of a detention/treatment facility; supervise the work of employees, inmates and juveniles; prepare, cook and coordinate cooking processes so that nutritional meals are prepared and served on time; understand and maintain files or other record systems; instruct and train inmates and juveniles in semi-skilled food preparation, service and cleaning tasks; estimate food quantity requirements for designated numbers of meals with a minimum of waste; follow oral and written directions; provide concise oral and written instructions; prepare and keep work and food preparation activity records and reports; inventory supplies and equipment; maintain effective working relationships with and between employees, inmates and juveniles; maintain effective security of kitchen personnel, equipment and utensils.

Responsibilities

Select, train and supervise Cooks, Senior Correctional Cooks and Food Service Workers who prepare and serve food; plan, assign, schedule, and evaluate the work of food service personnel.
Direct the food preparation activities at adult or juvenile detention/treatment facilities; assist in analyzing needs and preparing and managing the budget; maintain cost accounting records, developing forms and records for food production cost control when necessary.
Assist in developing long-term and short-term plans for a food service operations and facilities; coordinate and supervise the work of food service personnel, inmates and/or juveniles preparing, cooking and serving food.
Maintain the security of the kitchen area and enforce disciplinary measures when needed; instruct and train inmates and/or juveniles in the operation of equipment used in semi-skilled kitchen tasks.
Plan and prepare menus and food quantity requirements; ensure that ingredients are prepared, cooked and served correctly for taste and wholesomeness; direct preparation of meals to meet special dietary requirements.
Coordinate and schedule work activities to have meals prepared and available; develop specifications for purchasing of food supplies; order, receive, check, and store foods and supplies.
Participate and direct the cleaning of food preparation areas, kitchen equipment, dining rooms, and storerooms to comply with state and County sanitation laws, rules and regulations.
Account for and secure all equipment and food supplies; prepare and keep records and reports on work and food preparation activities.
Inspect and ensure that kitchen equipment is maintained and operated according to safety procedures.
Train employees in the operation of kitchen equipment, sanitation, food preparation, and security procedures.
Participate in design of new kitchen facilities; perform duties of a cook and work rotating shifts as needed.
