About The Position

This position is located at Greene Correctional Institution, a minimum custody facility for adult male offenders. Employees in this class are responsible for supervision of Correctional Food Service Officers and providing oversight of inmates performing large-scale food production and food service. The position reports to the Correctional Food Service Manager.

Requirements

  • High school or General Educational Development (GED) diploma and two years of experience in institutional food preparation and food services, in management of a commercial food service operations, or as a Correctional Officer, or one year as a Correctional Food Service Officer; or an equivalent combination of education and experience.
  • Documented knowledge of large-scale food production and food service activities.
  • Documented supervision of employees and/or offender workers.
  • Must be eligible for certification by the North Carolina Criminal Justice Education & Training Standards Commission.

Responsibilities

  • Supervision of Correctional Food Service Officers
  • Oversight of inmates performing large-scale food production and food service
  • Ensuring proper food preparation, storage, and sanitation of the food service section
  • Adhering to accepted principles and practices of dietetics and nutrition
  • Meeting dietary requirements for a variety of therapeutic and religious diets and appropriate substitutions
  • Calculating food quantities needed for a large number of inmates
  • Understanding the relative costs of various food items
  • Utilizing unarmed self-defense tactics, batons, and emergency equipment
  • Using and caring for firearms and proper restraint methods and techniques
