About The Position

This position is located at Roanoke River Correctional Institution in Halifax County, NC. This position is assignment to the Food Service area at the minimum and medium custody facility. Employees in the class are responsible for supervision of Correctional Food Service Officers and providing oversight of inmates performing large scale food production. Responsibilities may include management supervision of multiple locations minimum and medium custody facility managed within the scope of the larger facility. Employees plan, direct, and supervise the daily preparation and serving of food to inmates. This position is responsible for monitoring the quality of the meals served and ensures that meals are prepared in accordance with policy. This position maintains a satisfactory level of cleanliness and ensures equipment is in good repair.

Requirements

High school or General Educational Development (GED) diploma and two years of experience in institutional food preparation and food services, in management of a commercial food service operations, or as a Correctional Officer, or one year as a Correctional Food Service Officer; or an equivalent combination of education and experience.
Must be eligible for certification by the North Carolina Criminal Justice Education & Training Standards Commission.
Documented knowledge of large-scale food production and food service activities.
Documented supervision of employees and/or inmate workers.

Responsibilities

Supervise subordinate staff, writes job descriptions and performance evaluations.
Plan, direct, and supervise the daily preparation and serving of food to inmates.
Monitor the quality of the meals served and ensures that meals are prepared in accordance with policy.
Maintain a satisfactory level of cleanliness and ensures equipment is in good repair.
Comprehend and calculate menus and menus planning using substitutions.
Observe sanitary food handling practices.
Understand food nutritional values.
Inventory and rotate stock.
Requisition food and supplies within budget.
Communicate both verbally and in written form.
Comprehend and abide by verbal and written instructions.
Work a varied work schedule and be able to report during emergencies.
Successfully complete all basic/annual training to include unarmed self-defense, firearms, and CPR.
