This role involves reviewing menus, preparing meals, working with dietitians, and ensuring food procedures are followed. Administrative tasks such as completing necessary forms and reports are also part of the responsibilities. The position requires assisting in establishing food service production lines, processing diet changes, preparing appetizing and palatable meals, and serving meals on a timely basis according to standardized portion control procedures. The cook must prepare food according to standardized recipes, therapeutic diets, and special diet orders, ensuring appropriate utensils and equipment are provided. Bedtime snacks and substitute foods are also prepared. Daily cleaning duties are directed, and assistance is provided for special meals and parties. Maintaining adequate stock levels of food and supplies is crucial. The role also emphasizes treating residents with dignity and respect, promoting resident rights, establishing a culture of compliance, and adhering to safety and hygiene measures. Confidentiality of protected health information must be maintained, and any noncompliance, retaliation, discrimination, or allegations of abuse must be reported. Participation in life safety and emergency drills is required, as is reporting work-related injuries. Infection control policies must be followed, and all assigned training and skills competency must be completed. Food storage areas must be kept clean and organized, and equipment and supplies must be maintained safely. Assisting with inventory and storing incoming food and supplies is necessary, as is ensuring food and supplies for the next meal are readily available. Recommending equipment and supply needs to the Director of Food Services is also part of the role. The work environment is a ventilated, well-lit area with a warm atmosphere for cooking, subject to frequent interruptions and communication with medical and nursing staff. The position may involve exposure to heat/cold temperatures, hostile residents, and infectious diseases. Cooking a variety of foods in large quantities, tasting and smelling food for quality, and following oral and written instructions are essential skills. Maintaining care and use of supplies, equipment, and work areas, and performing regular inspections for sanitation, order, safety, and proper performance of duties are also required. The position may be subject to call-back during emergency conditions.
