About The Position

This position is responsible for supervising and instructing inmate workers in various food preparation roles, including cooks, butchers, bakers, dining and dish workers, vegetable preparation workers, and pot and pan washers. The role involves continuous training of inmate workers on food production, presentation, and sanitation. The Cook Supervisor also oversees the receiving, storing, and issuing of food and non-food items, and is responsible for security operations such as key control, yeast control, knife and blade control, inmate accountability, and contraband searches. Maintaining the security of the institution is a primary and recurring responsibility for this position, preceding all other duties.

Requirements

  • U.S. Citizenship is Required.
  • Sufficient training and experience to show ability to perform the duties of the position.
  • Meet the Barely Acceptable level on screen-out elements: Ability to supervise and Aptitude for work with prisoners.
  • Receive at least one half of the total possible points on the assessment.
  • Furnish detailed information on resume to support assessment responses demonstrating possession of experience and skills.
  • Possess an approved Food Protection Manager Certification from a provider accredited by the American National Standards Institute (ANSI).
  • Maximum entry age of 36 for original appointment to a position in a Bureau of Prisons institution (exceptions may apply for prior federal law enforcement coverage or qualified preference eligible veterans).
  • Satisfactory completion of a pre-employment and panel interview, urinalysis, physical, and background investigation.
  • Satisfactory pass all screening requirements in relation to National Crime Information Center (NCIC) and credit check.
  • Complete a qualification inquiry regarding convictions of misdemeanor crimes of domestic violence if not currently working in an institution and will be authorized to carry a firearm.
  • Successful completion of the "Introduction to Correctional Techniques", three-week training course at Glynco, Georgia is required.

  • Thorough knowledge of the full range of food preparation principles, including techniques and procedures for developing or revising recipes.
  • Knowledge of procedures related to cooking in large quantities.
  • Knowledge of special and modified diets (e.g., high protein, low cholesterol, low fat, calorie restricted, sodium restricted).

Responsibilities

  • Provide supervision and instruction to 25-30 inmate workers assigned to food preparation and service roles.
  • Conduct continual training for inmate workers on all phases of food production, presentation, and sanitation.
  • Oversee the receiving, storing, and issuing of all food and non-food items.
  • Manage security operations including key control, yeast control, knife and blade control, and inmate accountability.
  • Conduct routine contraband searches throughout the work area.
  • Maintain the security of the institution as a primary responsibility.
