Requirements

  • Strong knowledge of cooking methods, including broiling, sautéing, frying, roasting, and moist heat; emphasis on stocks, sauces, and sauté station
  • Expert knife skills and safety
  • Proficiency with kitchen equipment (stoves, ovens, broilers, kettles, steamers)
  • High school diploma or equivalent; culinary or apprenticeship training preferred
  • Understanding of pantry fundamentals and cold food preparation
  • Ability to stand for long periods and work in confined spaces and extreme temperatures.
  • Lift and carry up to 50 lbs continuously
  • Basic math skills for recipes, measurements, requisitions, and portioning.
  • Ability to read recipes and follow measurements accurately
  • Ability to communicate effectively in English (read, write, speak)

Nice To Haves

  • Relevant experience in high-volume or resort kitchen environments preferred
  • additional language skills preferred

Responsibilities

  • Prepares all food items according to standard recipes and/or as specified on guest check.
  • Visually inspects, selects and uses only food items ideal cooking, in preparation of all menu items to ensure consistency of product to the guest.
  • Prepare a variety of food items including meats, poultry, seafood, vegetables, and cold foods.
  • Prepares daily requisitions for supplies and food items for production.
  • Work independently at assigned workstation to prep menu items.
  • Store food properly in accordance with the Health Department and hotel standards.
  • Minimize waste and maintain food cost controls.
  • Review work status and check in with leaders before the end of shift.
  • Checks and controls the proper storage of products, monitoring age and condition of all food items to rotate and maintain highest quality.
  • Keeps all refrigeration equipment, storage and working areas clean and clutter free, complying with Health department regulations.
  • Maintain cleanliness, sanitation, and organization of assigned work areas.
