The Cook III position involves preparing all food items according to standard recipes and guest specifications, ensuring consistency and quality. This includes preparing various food items like meats, poultry, seafood, vegetables, and cold foods. The role also requires managing daily requisitions, working independently, proper food storage, minimizing waste, controlling food costs, and maintaining cleanliness and sanitation in assigned work areas.

Requirements

  • Strong knowledge of cooking methods, including broiling, sautéing, frying, roasting, and moist heat; emphasis on stocks, sauces, and sauté station
  • Expert knife skills and safety
  • Proficiency with kitchen equipment (stoves, ovens, broilers, kettles, steamers)
  • High school diploma or equivalent
  • Understanding of pantry fundamentals and cold food preparation
  • Ability to stand for long periods and work in confined spaces and extreme temperatures
  • Lift and carry up to 50 lbs continuously
  • Basic math skills for recipes, measurements, requisitions, and portioning
  • Ability to read recipes and follow measurements accurately
  • Ability to communicate effectively in English (read, write, speak)

Nice To Haves

  • Relevant experience in high-volume or resort kitchen environments preferred
  • Culinary or apprenticeship training preferred
  • Additional language skills preferred

Responsibilities

  • Prepares all food items according to standard recipes and/or as specified on guest check
  • Visually inspects, selects and uses only food items ideal cooking, in preparation of all menu items to ensure consistency of product to the guest
  • Prepare a variety of food items including meats, poultry, seafood, vegetables, and cold foods
  • Prepares daily requisitions for supplies and food items for production
  • Work independently at assigned workstation to prep menu items
  • Store food properly in accordance with the Health Department and hotel standards
  • Minimize waste and maintain food cost controls
  • Review work status and check in with leaders before the end of shift
  • Checks and controls the proper storage of products, monitoring age and condition of all food items to rotate and maintain highest quality
  • Keeps all refrigeration equipment, storage and working areas clean and clutter free, complying with Health department regulations
  • Maintain cleanliness, sanitation, and organization of assigned work areas
