The Cook II position at Fairmont Sonoma Mission Inn & Spa is responsible for producing a variety of foods with an emphasis on fresh, appealing presentation. This role requires knowledge of butchery, sauce making, and some garde manger skills. The Cook II will prepare and service all food items for a la carte and/or buffet menus according to hotel recipes and standards, and will actively share ideas and suggestions in daily shift briefings. Maintaining proper product rotation to minimize waste and accurate storeroom requisitions are also key responsibilities. The Cook II must have full knowledge of all menu items, daily features, and promotions, and ensure the cleanliness and maintenance of all work areas, utensils, and equipment, adhering to all safety and sanitation policies.
