About The Position

Four Seasons Private Residences Los Angeles is seeking a Cook 2 to manage the day-to-day operations of their kitchen station. This role involves assisting in menu creation, preparing dishes, managing mise en place, and ensuring quality production and presentation. The Cook 2 will also be responsible for inventory, communication with other departments, and maintaining a clean and organized work environment. This position requires a high level of skill in cooking, plating, and responding to resident requests, including special meal preparations. The role also involves covering for the Cook I and contributing to the development of unique menu specials. The ideal candidate will be able to work independently in a fast-paced environment and handle building emergencies professionally.

Requirements

  • Reading, writing and oral proficiency in the English language.
  • High school graduate and an apprenticeship, cooking school or culinary institute education.
  • Highly developed sense of taste and comprehensive sauce preparation skills.
  • Refined plating techniques.
  • Casual dining experience 3+ years.

Responsibilities

  • Assist in creating and preparing menu items and specials.
  • Check and complete mise en place and pars and set-up the station.
  • Complete requisitions, obtain proper signatures and submit to the Purchasing department.
  • Communicate regarding menu items, problem situations or shortages.
  • Utilize the computer system in retrieving orders.
  • Work closely with standard recipes and plate presentations in order to maintain standards of quality in production and presentation.
  • Maintain a good working relationship with other employees, providing instruction and encouragement as needed.
  • Store items properly at the end of the shift.
  • Ensure a clean, neat, and organized work area.
  • Handle and report any accident immediately, no matter how minor.
  • Conduct oneself in a professional manner at all times to reflect the high standards of Four Seasons Hotels and encourage staff to do the same.
  • Respond appropriately to resident requests with respect to special meal preparation or substitutions.
  • Work alone in a busy environment.
  • Create unique, flavorful, and quality specials.
  • Cover the Cook I on days off and vacations.
  • Cost recipes.
  • Respond properly in any building emergency or safety situation.
  • Perform other tasks or projects as assigned by department leadership, management, and staff.
