About The Position

At Four Seasons Private Residences Los Angeles, the Cook 2 runs the day-to-day operation of the station in the kitchen. This role involves assisting in creating and preparing menu items and specials, ensuring mise en place and pars are completed, and setting up the station. The Cook 2 will also handle requisitions, communicate regarding menu items and shortages, utilize the computer system for orders, and work closely with standard recipes and plate presentations to maintain quality standards. A key aspect of this role is maintaining good working relationships with colleagues, providing instruction and encouragement, and properly storing items at the end of the shift. The position requires ensuring a clean and organized work area, handling and reporting accidents immediately, and conducting oneself professionally at all times. The Cook 2 will respond appropriately to resident requests for special meal preparation or substitutions, work independently in a busy environment, create unique and flavorful specials, and cover for the Cook I during their days off and vacations. Additionally, this role involves costing recipes and responding properly to building emergencies or safety situations, as well as performing other assigned tasks.

Requirements

  • Reading, writing and oral proficiency in the English language.
  • High school graduate and an apprenticeship, cooking school or culinary institute education.
  • Highly developed sense of taste and comprehensive sauce preparation skills.
  • Refined plating techniques.
  • Casual dining experience 3+ years.

Responsibilities

  • Assist in creating and preparing menus items and specials.
  • Check and complete mise en place and pars and set-up the station.
  • Complete requisitions, obtain proper signatures and submit to the Purchasing department.
  • Communicate regarding menu items, problem situations or shortages.
  • Utilize the computer system in retrieving orders.
  • Work closely with standard recipes and plate presentations in order to maintain standards of quality in production and presentation.
  • Maintain a good working relationship with other employees, providing instruction and encouragement as needed.
  • Store items properly at the end of the shift.
  • Ensure a clean, neat, and organized work area.
  • Handle and report any accident immediately, no matter how minor.
  • Conduct oneself in a professional manner at all times to reflect the high standards of Four Seasons Hotels and encourage staff to do the same.
  • Respond appropriately to resident requests with respect to special meal preparation or substitutions.
  • Work alone in a busy environment.
  • Create unique, flavorful, and quality specials.
  • Cover the Cook I on days off and vacations.
  • Cost recipes.
  • Respond properly in any building emergency or safety situation.
