About The Position

The Commissary Cook prepares, seasons, and mixes grab-and-go salads, sandwiches, compound salads, fruit and vegetable displays, and other foods for consumption in dining areas at Hollywood Casino at Charles Town Races. The role fills commissary orders for outlets and supports food preparation and cooking operations. This position has no supervisory responsibilities.

Requirements

• At least 3 months of experience in the culinary field.
• Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.
• Ability to calculate figures and amounts such as proportions, percentages, area, circumference, and volume.
• Ability to apply common-sense understanding to carry out written, oral, or diagram-form instructions.
• Must qualify for licensing with the West Virginia Racing Commission.
• Must attend and pass certification for the West Virginia Food Handlers Class.
• Ability to lift 50 pounds and stand for long periods of time.
• Ability to meet the listed physical and sensory demands of the job.

Responsibilities

• Prepare, season, and mix grab-and-go salads, sandwiches, compound salads, fruit and vegetable displays, and other food items.
• Slice meats, cheeses, vegetables, and fruits, and portion food to fill orders.
• Fill commissary orders for outlets.
• Add seasonings to foods during mixing or cooking.
• Observe and test foods during cooking by tasting, smelling, and piercing with a fork to assess doneness.
• Wash, peel, cut, and shred vegetables and fruits for use.
• Perform other duties as assigned.
