The Hot Food Production Commis Chef plays a critical role in high-volume meal production, supporting the preparation and execution of over 1,000 meals daily. This role requires strong culinary fundamentals, strict adherence to standardized recipes, and a commitment to food safety and quality. The ideal candidate thrives in a fast-paced production environment and contributes to a collaborative, team-oriented kitchen culture.

Requirements

  • 1+ year of high-volume food prep, packaging, or kitchen production experience
  • Ability to lift 50+ lbs and stand for extended periods
  • Strong multitasking and time management skills
  • Strong knife skills and understanding of cooking techniques
  • Ability to follow recipes and maintain consistency at scale
  • Efficient in high-volume, deadline-driven environments
  • Works well in a diverse, fast-paced team setting
  • Able to adjust to changing production needs and priorities
  • Punctual, dependable, and self-motivated

Nice To Haves

  • NY Food Handler’s Certificate/Card
  • Bilingual (English/Spanish)
  • Experience in commissary or large-scale food production kitchens

Responsibilities

  • Execute standardized recipes with precision to ensure consistency and quality
  • Prepare and cook hot food items (chopping, sautéing, roasting, reheating, portioning)
  • Support large-scale meal production aligned with daily output targets
  • Ensure proper portioning and presentation standards
  • Follow daily production plans and direction from chefs and shift leads
  • Maintain speed and efficiency while meeting production deadlines
  • Assist in scaling recipes and adjusting workflows as needed
  • Maintain strict adherence to food safety, sanitation, and GMP standards
  • Monitor food temperatures and understand heat degradation during transport
  • Ensure all products meet company quality standards before distribution
  • Set up and break down stations with required tools, ingredients, and equipment
  • Maintain clean, organized, and fully stocked work areas throughout shifts
  • Follow proper cleaning and sanitation procedures
  • Communicate effectively with team members and leadership
  • Support team workflow and assist in resolving production challenges
  • Maintain a positive, team-oriented attitude in a fast-paced environment
