This position is primarily responsible for selling, serving and actively promoting wine sales within the Hotel.

Requirements

  • Complete knowledge of and comply with all departmental policies/service procedures/standards.
  • Complete knowledge of correct maintenance and use of equipment.
  • Knowledge of Faena wine service standards.
  • Ability to keep inventory and inform Sommelier of wines needing to be ordered.
  • Ability to store wines.
  • Ability to maintain wine list and recommend prices.
  • Ability to discuss wines with patrons and assist with selections.
  • Ability to open wine bottles, taste wine, and serve wines to patrons.
  • Complete knowledge of and strictly abide by state liquor regulations.
  • Ability to inform restaurant and beverage staff of out-of-stock items.
  • Ability to review reserved tables and follow up on special arrangements.
  • Ability to review daily specials.

Responsibilities

  • Maintain complete knowledge of and comply with all departmental policies/service procedures/standards.
  • Maintain complete knowledge of correct maintenance and use of equipment. Use equipment only as intended.
  • Monitor and maintain cleanliness, sanitation and organization of assigned work areas.
  • Follow all Faena wine service standards and sequences of service are being followed and adhered to by the staff while on duty.
  • Keeps inventory and lets Sommelier know which wines need to be ordered to replenish stock.
  • Stores wines on racks or shelves in wine cellar.
  • Maintains wine list and recommends bottle or individual glass prices.
  • Discusses wines with patrons and assists patrons to make wine selection.
  • Opens wine bottle, tastes wine or offers taste to patron prior to serving, and serves wines to patrons.
  • Maintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and driving while under the influence.
  • Helps to inform restaurant and beverage staff of what items are temporarily out of stock.
  • Review reserved tables and names of such; follow up on special arrangements for pre-assigned tables
  • Review daily specials.
