We're hiring a full-time Chef de Partie to lead the daily operations at Harvey's and ensure the kitchen team maintains high food quality, safety, and consistency standards. Requirements

  • 3+ years of culinary experience in an upscale or fine-dining environment.
  • Deep understanding of classic and modern cooking techniques.
  • Working knowledge of food safety and sanitation procedures.
  • Ability to deliver clean and efficient work in a high-expectation, fast-paced environment.
  • Deep knowledge of wine, spirits, beer, and food, with a strong understanding of proper service standards, including timing and execution of coursed dining experiences.
  • Excellent communication, leadership, and delegation skills.
  • Flexible schedule availability for working nights, weekends, holidays, and club events.

Responsibilities

  • Lead the daily operations at Harvey's fine-dining outlet.
  • Ensure the kitchen team maintains high food quality, safety, and consistency standards.
  • Deliver the Harvey's fine-dining experience by leading a small team of 4 culinary professionals.
  • Ensure seamless operations and maintain an uncompromising standard of excellence for members.
  • Mentor the team, provide valuable coaching, and ensure all culinary operations meet club standards, recipes, and service expectations.
  • Inspect line stations, product quality, mise en place, freshness, labeling, and sanitation compliance daily.
  • Create precise prep lists to efficiently prepare for upcoming meal service.
  • Lead the team in delivering consistent, timely, and well-plated meals in coordination with FOH staff during culinary service.
  • Ensure cleanliness, organization, and food safety procedures are followed by all team members.
  • Collaborate with leadership to develop new menu items and seasonal offerings.
  • Assist with documenting recipes, monitoring costs, managing inventory, and minimizing waste.
  • Elevate the overall member experience.
