About The Position

We have an opening for a full time CHEF DE PARTIE position. This role involves directing, coordinating, and evaluating assigned kitchen, food production, and food-service associates. The Chef De Partie will supervise, coordinate, and participate in the activities of cooks and other associates engaged in preparing, cooking, and serving food, ensuring all food handling, sanitation, and customer service standards are met. They will also supervise hourly kitchen associates, including interviewing, scheduling, payroll, training, counseling, participating in reviews, and recommending disciplinary action. The role requires efficiently preparing high-quality food items according to standardized recipes to meet production, delivery, and service schedules, ensuring proper presentation, food quality, portion control, and maintenance of proper serving temperatures. Additionally, the Chef De Partie will track food use, waste, and consumption to requisition or purchase product, receive and inspect product and supplies for quality and quantity, and maintain sanitation of equipment, supplies, and utensils. They will also keep display equipment clean and free of debris during meal service and may help select and develop recipes and menus. This position is part of Restaurant Associates, a leading provider of dining and event catering for prestigious institutions.

Requirements

  • Previous executive dining experience is required.
  • 2+ years of culinary experience, ideally in fine dining, private chef roles, or high-end hospitality.
  • Exceptional interpersonal skills with a polished, professional demeanor suited for corporate executives.
  • Proven ability to maintain absolute confidentiality in a private club or VIP environment.
  • Valid local food handler or food manager certification required.
  • Use of a medium weight cut gloves when handling or using knives, peelers, choppers, mandolins or cleaning a slicer.
  • Use of oven mitts, fryer gloves or steamer gloves when handling hot pans from ovens, warmers or steamtables.
  • Use of slip-resistant shoes and proper lifting techniques.

Responsibilities

  • Prepare and present a limited, high-end menu of light bites, small plates, or pairings with exceptional attention to detail.
  • Act as a culinary host, engaging warmly with executive guests, explaining menu offerings, and accommodating specific dietary preferences.
  • Operate with the utmost discretion regarding guest identities, conversations, and business matters.
  • Oversee the entire evening operation of the speakeasy kitchen, including opening setup, inventory control, and closing sanitation.
  • Supervises, coordinates and participates in activities of cooks and other associates engaged in preparing, cooking and serving food.
  • Ensures all food handling, sanitation and customer service standards are met.
  • Supervises hourly kitchen associates, including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action.
  • Efficiently prepares high-quality food items according to standardized recipes to meet production, delivery and service schedules.
  • Serves meals or prepares for delivery.
  • Ensures proper presentation, food quality, portion control and maintenance of proper serving temperatures.
  • Tracks food use, waste and consumption to requisition or purchase product.
  • Receives and inspects product and supplies for quality and quantity to ensure appropriate inventory.
  • Maintains sanitation of equipment, supplies and utensils.
  • Cleans workstation thoroughly before leaving area.
  • Keeps display equipment clean and free of debris during meal service to ensure compliance with sanitation, safety, production and merchandising requirements.
  • Helps select and develop recipes and menus.
  • Performs other duties as assigned.
