About The Position

San Joaquin Nursing & Rehabilitation Center is seeking an experienced and motivated Certified Dietary Manager (CDM) to lead our Dietary Department. This leadership position is responsible for ensuring residents receive high-quality, nutritious meals while maintaining compliance with all federal, state, and facility regulations. General Purpose: The Dietary Director oversees all aspects of the dietary department, including meal planning, food preparation, and service delivery. This role ensures that meals are safe, nutritious, and tailored to meet each resident's individual needs in accordance with physician orders, approved menus, and regulatory standards. The Dietary Director manages staff, maintains budget compliance, and coordinates with other departments to support resident well-being and satisfaction.

Requirements

  • Graduate of an approved Dietary Manager course meeting state and federal requirements
  • Current Certified Dietary Manager (CDM) credential preferred
  • Minimum one year of experience in a long-term care dietary department preferred
  • Knowledge of PointClickCare (PCC) preferred
  • Must maintain required continuing education and certifications
  • Must remain in good standing with applicable licensing and certification agencies
  • Strong leadership and team-building skills
  • Excellent communication and organizational abilities
  • Knowledge of dietary regulations and long-term care nutrition standards
  • Budget management and cost-control experience
  • Strong customer service and resident satisfaction focus

Responsibilities

  • Direct and participate in the preparation and service of meals that are safe, appetizing, and meet prescribed dietary needs
  • Maintain food quality, portion control, and compliance with approved menus and physician orders
  • Manage departmental budgets, food costs, and supply inventories
  • Plan and coordinate special meals, holiday events, and resident celebrations
  • Hire, train, supervise, and evaluate dietary staff
  • Ensure compliance with food storage, sanitation, infection control, and safety regulations
  • Process new diet orders and maintain accurate resident dietary records
  • Assess resident food preferences, allergies, and nutritional concerns
  • Complete monthly nutritional notes and required documentation
  • Develop and manage staff schedules and department coverage
  • Conduct regular inspections of kitchen and storage areas
  • Collaborate with nursing, therapy, activities, and interdisciplinary team members
  • Participate in Quality Assurance (QA) and Interdisciplinary Team (IDT) meetings
  • Provide ongoing staff education and in-service training
  • Investigate workplace incidents and implement corrective actions as needed
  • Maintain confidentiality of resident information in accordance with HIPAA guidelines
  • Visit residents regularly to discuss dietary preferences and nutritional needs
  • Communicate menu changes and nutritional concerns with the Registered Dietitian
  • Direct supervision and management of dietary staff
  • Staff scheduling, training, coaching, performance evaluations, and disciplinary action
  • Ensuring departmental compliance with facility policies and regulatory requirements
