About The Position

As a Butcher II in one of our meat departments, you will have the opportunity to produce high quality meat cuts and seafood products for our customers. You are looking for a way to utilize your knowledge and experience in meat and seafood to serve our customers and provide them with guidance and information regarding meat and seafood. Requirements

  • At least 2 years of experience as a Butcher
  • Knowledge of grades of meat
  • Knowledge of HACCP plan and Servsafe principles
  • A positive attitude and collaborative spirit
  • Outstanding customer service skills

Nice To Haves

  • Previous experience with seafood
  • Education or training in meat cutting, butchery, or other culinary field

Responsibilities

  • Lead the efforts to create an exciting product selection at our meat and seafood counter, researching new items and adding recipes as determined in conjunction with the Meat Department Manager and Purchasing department.
  • Cut, trim, bone, tie, and grind meats, such as beef, pork, poultry, and fish, to prepare meat in cooking form
  • Shape and tie roasts use a boning knife and twine
  • Cure, smoke, tenderize and preserve meat
  • Assure a safe, efficient, and clean meat department, adhering to safety and cleanliness standards.
  • Stay abreast of industry trends, natural and organic practices, recalls and warnings
  • Order product using SMS as needed, working with the Meat Manager to maintain proper inventory levels
  • Adhere to proper receiving protocols that ensure delivery quality and accurate quantities per invoice
  • Complete inventory and enter product loss into SMS according to established procedures and time frames
  • Maintain effective working relations with suppliers
  • Work closely with the Logistics staff to ensure accurate data management including inventory numbers, ingredients, recipes and correct pricing
  • Assist as needed with daily operations, routines, and procedures.
  • Record quantity of meat received and issued to cooks and keep records of meat transfers.
  • Effectively use all department equipment
  • Comply with all laws, rules and regulations pertaining to the meat department
  • Assist with preparations for Wisconsin Department of Agriculture, Trade and Consumer Protection and other inspections
  • Maintain daily temperature and production logs accurately
  • Greet and offer assistance to customers
  • Treat people fairly, consistently and with respect
  • Know product locations in order to assist customers in finding what they need throughout the store
  • Abide by all Co-op policies and procedures as outlined in the Employee Handbook and other company documents
  • Participate in required training and meetings
  • Perform all other duties as assigned by a supervisor
