Requirements

  • Previous leadership experience as a Sous Chef or Senior Chef de Partie in a high-volume, upscale restaurant.
  • Fine dining experience is required.
  • Strong culinary knowledge with a passion for innovation and seasonal ingredients.
  • Excellent leadership, coaching, and communication skills.
  • Proven ability to work effectively in a fast-paced environment while maintaining exceptional quality.
  • Strong organizational and time management skills.
  • Sound understanding of food cost management, inventory control, and labour management.
  • Valid Food Safe Level 1 certification (Level 2 is considered an asset).
  • Ability to work a flexible schedule, including evenings, weekends, and holidays.
  • Food Safe certification
  • Must be legally eligible to work in Canada. The hotel is unable to assist candidates in obtaining Canadian work authorization.

Responsibilities

  • Lead, mentor, coach, and inspire a team of culinary professionals while fostering a positive and inclusive work environment.
  • Support the Executive Chef and Chef de Cuisine in the daily operation of Botanist.
  • Ensure all dishes are prepared and presented according to established recipes and quality standards.
  • Maintain consistency in food quality, presentation, and portion control.
  • Assist with menu development, seasonal features, and special event menus.
  • Monitor food costs, labour costs, and kitchen productivity while identifying opportunities for continuous improvement.
  • Ensure proper ordering, receiving, inventory control, and waste management.
  • Maintain the highest standards of food safety, sanitation, and cleanliness in accordance with HACCP and health regulations.
  • Collaborate with the Front of House team to deliver seamless service and exceptional guest experiences.
  • Assist with scheduling, training, onboarding, and performance management of culinary colleagues.
  • Participate in recruitment and selection of new culinary talent.
  • Promote a culture of safety by ensuring compliance with all health and safety policies and procedures.
  • Step into the Chef de Cuisine's responsibilities in their absence as required.
  • Perform other duties as assigned.
