About The Position

This position is responsible for servicing all food and beverage outlets, including preparation of food and beverage items for The Bistro, The Market, Meeting Rooms, and “to-go” Display Cases. Responsibilities also include cleaning of wares, equipment, function spaces, and the dining area in The Bistro. The role requires a self-motivated individual with a sense of urgency to meet and exceed guest expectations with high energy, accuracy, and sincere concern for individual needs, utilizing the 15-5 rule and always using the guest's name twice. A positive attitude and professional demeanor are expected at all times as team members are always on stage. This is a fast-paced environment requiring a thorough understanding and working knowledge of all equipment, including the Starbucks Espresso machine, TurboChef, Micros, and Dish machine. Communication with guests, team members, and management is crucial for guest satisfaction. Team members must be cross-trained at the Front Desk to assist during high-volume periods and monitor the lobby to help where needed. Maintaining sanitary and organized equipment and work areas is essential, adhering to strict sanitation guidelines. The role involves assisting with meeting room setup, breakdown, and servicing, potentially working long days and multi-tasking. Production charts, usage records, and temperature logs must be used to ensure safe and efficient operations. A strong working knowledge of food safety practices, including proper temperatures, cleaning, and sanitation procedures, is required. The ability to predict and proactively meet guest needs, empathize, problem-solve, and maintain high energy levels is also necessary.

Requirements

  • General working knowledge of an automatic dishwasher and its function within a hotel.
  • Ability to work the machines and equipment in the kitchen safely and accurately, including Starbucks Espresso machine, Micros, Fosse, Dishwasher, TurboChef.
  • Ability to grasp, lift, carry or otherwise move materials weighing up to 50 lbs.
  • Good working knowledge of accepted standards of sanitation.
  • Basic knowledge on chemicals and the various dispensers that operate only when chemical is present.
  • Ability to read, write and understand the English language in order to comprehend guest needs, instructions, and accurately converse with Guests and fellow Team Members.
  • Able to maintain a positive attitude.
  • Must be able to bend down, reach under and over into coolers, refrigerators and ovens.
  • Ability to hear audible alarm signals that meet NFP codes with sound decibels -10-30 range.
  • Ability to reach up to five (5) feet high in order to clean or place equipment.
  • Regular attendance in conformance with the standards established by the hotel.
  • Ability to be on call and work flexible shifts.
  • Ability to work varying schedules to reflect the business needs of the hotel, including weekends and holidays.
  • Fully comply with hotel rules and regulations for the safe and efficient operation of hotel facilities.
  • Great Food Safe Food certification is required.
  • Tips Certification is required.

Responsibilities

  • Oversee the position with self-motivation and responsibility, actively monitoring the lobby and demonstrating urgency to meet and exceed guest expectations with high energy, accuracy, and sincere concern.
  • Utilize the 15-5 rule and use guests' names twice, maintaining a positive attitude at all times.
  • Prepare hot & cold foods for The Bistro, meeting spaces, The Market, and the “to-go” display case, ensuring proper health-department standards for serving and storage.
  • Restock purchased items and report low food and/or beverage items for reordering.
  • Properly use all equipment and systems including Starbucks Espresso machine, TurboChef, Micros, Dish machine, and other Bistro/Kitchen equipment.
  • Actively communicate with Guests, Team Members, and Management to ensure guest satisfaction.
  • Cross-train at the Front Desk to assist both departments during high-volume periods and monitor the lobby to help where needed when the Bistro is slow.
  • Maintain and clean equipment to ensure it stays sanitary, clean, and in proper working order.
  • Maintain an organized dishwasher and/or pot sink station using proper chemicals, cleaning all dirty dishes, pots & pans as necessary.
  • Work with sanitary standards throughout the shift.
  • Assist in the setup, breakdown, and servicing of the meeting room, working long days when required for functions.
  • Handle multi-tasking to adequately serve guests in the Bistro and meeting spaces.
  • Maintain a clean and organized Bistro, Market, Lobby, Meeting Rooms, and Kitchen areas at all times.
  • Ensure all cleaning is done to the highest expectations at the end of each shift, including breaking down and cleaning equipment, removing dirty dishes, taking out trash, mopping, and other tasks requested by supervisors.
  • Use production charts, usage records, temperature logs, and other documentation for safe and efficient operation of the Bistro and Market.
  • Adhere to sanitation guidelines, including the use of gloves and frequent hand washing.
  • Use and maintain an accurate cash register.
  • Perform basic mathematical calculations to ensure specified amounts of wares are maintained.
  • Store food products properly, date, and rotate new stock.
  • Perform other duties as requested, such as moving supplies and equipment, and cleaning up spills.
