About The Position

Oaklawn is seeking a talented Banquet Kitchen Supervisor to join their team. This role is responsible for supervising and coordinating the activities of food preparation, kitchen, pantry, and storeroom personnel, as well as purchasing or requisitioning foodstuffs and kitchen supplies. Requirements

  • Must be at least 21 years of age.
  • Two or more years of culinary experience in multiple venues required, or equivalent combination of education and experience.
  • Three or more years of previous supervisory experience required.
  • Must be able to handle several projects and tasks at the same time.
  • Must be able to perform the physical job duties of all Food & Beverage team members.
  • Must have the ability to interact with guests, staff and colleagues and resolve problems and conflicts in a diplomatic and tactful manner.
  • Ability to read and interpret documents in English, such as safety rules, operating and maintenance instructions and procedure manuals.
  • Ability to read and communicate verbally in English.
  • ServSafe certified.

Responsibilities

  • Supervising and coordinating the activities of food preparation, kitchen, pantry, and storeroom personnel.
  • Purchasing or requisitioning foodstuffs and kitchen supplies.
  • Assisting the sous chef with department inventory procedures, including checking incoming orders and deliveries.
  • Communicating effectively with vendors and notifying the appropriate person of any delivery issues or inconsistencies.
  • Conducting daily shift line checks of the kitchen to ensure accurate and complete prep work in accordance with food safety and sanitation regulations.
  • Ensuring proper and accurate labeling with dates on all food containers for freshness and first-in, first-out organization.
  • Ensuring preparation of all meals in compliance with standardized recipes and portion volumes.
  • Assisting team members during service times.
  • Ensuring cleanliness and maintenance of all work areas, utensils, and equipment, and communicating any repairs needed.
  • Working with the team to ensure proper order pacing and timely execution of food by kitchen teams.
  • Assisting the sous chef in preparing daily prep lists and overseeing their execution by kitchen teams.
  • Assisting the chef with leadership for all cooks and kitchen team members, including training, safety, sanitation, and company policies.
  • Following all prep lists and ensuring kitchens are stocked and ready for service.
  • Maintaining cost control methods and procedures by monitoring consistent pars and inventory.
  • Demonstrating, training, assessing, and providing feedback to new hires on proper preparation of food items.
  • Proactively communicating staffing needs and implementing development plans for current team members.
  • Establishing and communicating goals and opportunities to the Executive Chef.
  • Assisting in effectively managing department budgets.
  • Creating and maintaining relationships with sponsors and vendors.
  • Following Purchasing/PO policies and procedures.
  • Following established procedures and policies of the Oaklawn Racing Casino Resort.
  • Evaluating team members within the department and delivering constructive feedback.
  • Determining recommendations for staffing (including interviewing and hiring) and scheduling.
  • Determining work procedures and expediting workflow.
  • Responsible for employee performance (disciplining, coaching, counseling).
