Herschend is seeking a dependable and efficient Banquet Cook to work along the team and support operations for our newest hospitality venture, Dolly Parton’s SongTeller Hotel, located in the heart of Downtown Nashville. Our Banquet Cook will participate in culinary production for banquet and special events, including hot and cold food preparation, batch cooking, protein preparation and fabrication, preparation of sauces and accompaniments, banquet plating and buffet setup, maintaining proper food handling procedures, and ensuring cleanliness and sanitation standards throughout the kitchen. Requirements

  • Must be at least 18 years of age.
  • High school diploma or equivalent required.
  • 2–3 years of professional culinary experience in a restaurant, hotel, or resort environment or similar high-volume kitchen operation required.
  • Must be able to obtain and maintain a Food Handler certification in accordance with local health regulations.
  • Demonstrated knowledge of basic cooking techniques and food preparation, including the ability to prepare a variety of dishes.
  • Ability to work in a fast-paced kitchen environment and maintain efficiency during busy service periods.
  • Must successfully complete a pre-employment background check and drug screening in accordance with company policy.

Nice To Haves

  • Culinary degree or formal culinary training preferred.
  • Basic computer skills preferred for use of kitchen systems, production logs, or labeling programs.

Responsibilities

  • Reports to the Sous Chef or Banquet Chef to receive daily production objectives, assignments, and priorities.
  • Reviews banquet menus, setup requirements, and preparation methods prior to service.
  • Prepares and cooks banquet menu items according to established recipes, portion standards, and presentation guidelines.
  • Operates banquet cooking equipment, including ovens, ranges, griddles, steamers, and warming units.
  • Performs batch cooking, including sauces, soups, proteins, vegetables, and garnishes, to meet large-scale service needs.
  • Ensures all dishes are properly seasoned, balanced in flavor, and consistent in quality.
  • Assists with mise en place and setup for banquet stations, buffets, and plated service events.
  • Monitors product, ingredient, and supply levels throughout preparation and communicates shortages to kitchen leadership.
  • Maintains clean, organized, and sanitary workstations, equipment, and storage areas.
  • Follows proper food handling, storage, labeling, and FIFO rotation procedures.
  • Ensures proper temperatures for cooking, holding, and serving banquet items.
  • Maintains awareness of food allergies and ensures proper labeling and separation of allergens.
  • Assists with opening and closing duties for banquet kitchens and service areas.
  • Supports the kitchen team to ensure smooth execution of banquet events.
  • Demonstrates proper knife skills, safe food preparation techniques, and knowledge of large-scale cooking methods.
  • Works efficiently under pressure to meet high-volume service timelines.
  • Participates in daily line-ups and communicates effectively with team members and banquet leadership.
  • Maintains professional appearance, good personal hygiene, and dependable attendance.
  • Able to lift up to 50 pounds and tolerate varying kitchen conditions, including heat and prolonged standing.
  • Performs other duties as assigned to support banquet operations.
