We are seeking an experienced Banquet Chef to join our culinary leadership team. This position plays a critical role in leading banquet kitchen operations while ensuring exceptional food quality, flawless event execution, and an outstanding dining experience for every guest.

Requirements

  • Minimum four years of progressive culinary experience in a hotel, banquet, restaurant, or catering environment, including supervisory responsibilities.
  • Associate degree or higher in Culinary Arts, Hospitality Management, or a related field with at least two years of culinary leadership experience.
  • Strong knowledge of banquet production, menu planning, food safety, sanitation, and kitchen operations.
  • Excellent leadership, organizational, communication, and time management skills.
  • Successful completion of a background check is required as a condition of employment.
  • Ability to stand, walk, bend, and work in a commercial kitchen for extended periods.
  • Ability to lift, carry, push, and pull up to 50 pounds.
  • Ability to safely operate commercial kitchen equipment and work in a fast-paced environment.
  • Commitment to maintaining the highest standards of food quality, sanitation, safety, and hospitality.

Nice To Haves

  • Previous Marriott or full-service hotel experience.
  • Experience executing large-scale weddings, conferences, and catered events.
  • ServSafe Manager Certification or equivalent.
  • Experience with food cost management, purchasing, and inventory control.

Responsibilities

  • Lead all banquet food preparation and execution for meetings, weddings, social events, and catered functions.
  • Plan daily production based on Banquet Event Orders (BEOs), guest counts, and event timelines.
  • Prepare and present high-quality food that meets hotel standards for taste, consistency, and presentation.
  • Collaborate with culinary leadership to develop banquet menus, recipes, seasonal offerings, and special event menus.
  • Ensure proper food handling, storage, labeling, sanitation, and temperature controls in accordance with health regulations.
  • Manage banquet food purchasing, inventory, ordering, and product rotation.
  • Monitor food costs, labor expenses, and waste while maintaining exceptional quality standards.
  • Recruit, train, coach, and develop banquet culinary associates.
  • Schedule banquet kitchen staffing based on business demands and event volume.
  • Partner closely with Event Management, Banquet Operations, and Sales to ensure seamless execution of every event.
  • Maintain a clean, organized, and safe kitchen environment.
  • Support capital equipment maintenance and ensure proper care of kitchen equipment.
  • Perform additional duties as assigned.
