About The Position

We are seeking an experienced Bakery Production Manager to lead high-volume artisan bread production at our central commissary Bakehouse in Norristown, PA. This Bakery Production Manager role is based out of a single production facility in Norristown that supplies breads, pastries, and baked goods to multiple company-owned cafes and kiosks across the Philadelphia region. You will work directly under the Bakehouse Director and own quality, efficiency, and team performance as we continue to scale. This is a hands-on leadership role for a baker who loves both the craft and the operation.

Requirements

  • 10+ years of experience in artisan bread production within a high-production commercial bakery / commissary environment
  • Proven leadership experience managing, training, and developing bakery teams
  • Experience supporting multiple retail locations from a centralized production facility
  • Strong organizational and operational skills - you build repeatable systems that work
  • Deep technical knowledge of artisan bread and ability to lead in a fast-paced, physically demanding environment
  • Food safety certification (ServSafe, HACCP, or equivalent) preferred
  • Ability to analyze production data and make data-driven decisions
  • Excellent communication and collaboration skills

Responsibilities

  • Oversee day-to-day artisan bread production at our commissary, ensuring consistency, quality, and adherence to recipes across all shifts
  • Lead fermentation, mixing, shaping, proofing, and baking processes for a wide range of artisan breads
  • Troubleshoot dough performance, oven scheduling, ingredient variability, and yield issues
  • Conduct regular product evaluations to ensure quality standards are met from Bakehouse to cafe
  • Recruit, train, schedule, and manage growing production teams of bakers, shift leads, and production staff in our Norristown facility
  • Build skills, develop future leaders, and foster a strong, accountable, safety-first culture
  • Set clear expectations and manage performance through coaching and structured feedback
  • Design and maintain systems for production planning, inventory, ordering, and scheduling
  • Create and refine SOPs to improve efficiency, reduce variability, and support onboarding
  • Own inventory management and ingredient forecasting to reduce waste and prevent shortages
  • Track key metrics - yield, waste, labor efficiency, output - and report on performance
  • Ensure compliance with food safety, sanitation, and labor regulations
