About The Position

SHEEP is a limited three-month residency on the rooftop of the Clayton Hotel & Members Club in Denver, offering a fire-driven dining experience focused on seasonality, craftsmanship, and hospitality. The concept features an open hearth and a four-course tasting menu, inviting guests to explore ingredients, stories, and traditions. We are seeking passionate hospitality professionals to join a celebrated culinary team for this anticipated dining experience. Back of House Team Members are crucial for executing food preparation and service with the highest standards of consistency, quality, and efficiency, working closely with the culinary team to prepare, cook, and plate dishes that align with SHEEP's vision. Successful candidates will be detail-oriented, collaborative, and dedicated to culinary excellence, with experience in chef-driven restaurants, fine dining, tasting menu service, or high-volume kitchens being preferred.

Requirements

  • Minimum 1 year of kitchen experience in a restaurant, hotel, or private club setting.
  • Ability to work evenings, weekends, and holidays.
  • Strong attention to detail and willingness to learn.
  • Ability to remain calm and professional in a fast-paced environment.
  • Ability to stand and walk for extended periods.
  • Ability to lift up to 50 pounds.

Nice To Haves

  • Experience in fine dining, tasting menu, Michelin-recognized, or chef-driven restaurants.
  • Familiarity with open-fire cooking or live-fire kitchen environments.
  • Strong knife skills and foundational cooking techniques.
  • Previous experience working in multiple kitchen stations (prep, garde manger, hot line, dish).

Responsibilities

  • Prepare, cook, and plate dishes according to recipes, standards, and chef direction.
  • Maintain consistency, quality, and presentation for all menu items.
  • Support prep work including ingredient preparation, butchery, sauces, and mise en place.
  • Execute service on the line with speed, accuracy, and attention to detail.
  • Maintain cleanliness, organization, and sanitation standards at all times.
  • Follow all health, safety, and food handling regulations.
  • Properly label, store, and rotate products to maintain freshness and reduce waste.
  • Assist with inventory, stocking, and receiving deliveries as needed.
  • Communicate clearly and effectively with chefs and fellow team members during service.
  • Support other stations and roles to ensure smooth kitchen flow.
  • Participate in pre-shift meetings, tastings, and ongoing training.
  • Contribute to a respectful, focused, and high-performance kitchen culture.
