About The Position

This is a hands-on overnight production leader role responsible for doughnut production, quality control, recipe adherence, labor and cost control, sanitation, staff supervision, and opening readiness. The manager leads BOH teams and ensures consistent, on-time, high-quality production.

Requirements

  • Bi-lingual — fluent in English and Spanish
  • Minimum 2 years bakery or high-volume kitchen leadership experience
  • Supervised teams of at least 15 staff
  • ServSafe certified (active)
  • Valid Food Handler card (not expired)
  • Experienced with ordering, receiving, pars, and inventory control
  • Skilled in troubleshooting, coaching, and staff development
  • Able to work overnight shifts

Responsibilities

  • Lead overnight BOH production and execute nightly production plans
  • Adjust production pars and ensure opening showtime readiness
  • Enforce recipe adherence and batch standards
  • Conduct quality control checks across all production stages
  • Place orders, manage receiving, and conduct weekly inventory
  • Control waste, food cost, and labor scheduling within budget
  • Validate daily equipment cleaning and weekly BOH deep cleans
  • Coach, train, and supervise BOH staff productivity
  • Troubleshoot production, equipment, and staffing issues
  • Report nightly production results and issues to GM
