About The Position

Under general supervision, assists in planning, preparing, and serving meals for juveniles housed in the Detention Home. Supports daily kitchen operations, ensuring food safety, cleanliness, and compliance with established nutritional guidelines and facility procedures.

Requirements

  • Knowledge in USDA Child nutrition program; food preparation, cooking techniques, and kitchen sanitation; food safety and storage requirements; nutritional guidelines for juveniles populations; inventory management; child nutrition program requirement; and facility security practices related to food services operations.
  • Skill in food preparation and meal service; inventory control; record keeping; time management; staff training; effective and written communication.
  • Ability to follow written and verbal instructions; work effectively in secure Juvenile Detention environment; meet meal service schedules and deadlines; establish positive working relationships with staff and residents; exercise sound judgement and professional discretion; to understand and follow departmental policies and procedures; and operate kitchen equipment safely and efficiently.
  • Knowledge of Internet software; Inventory software and Microsoft Excel Spreadsheet software.
  • Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.
  • Ability to write routine reports and correspondence.
  • Ability to speak effectively before groups of customers or employees of organization.
  • Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
  • Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.
  • Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form.
  • Ability to deal with problems involving several concrete variables in standardized situations.
  • Valid Food Handlers Permit
  • Must be at least 21 years of age- defined by Oklahoma Administrative Code § 377:3-13-43

Nice To Haves

  • Vo-Tech training in Culinary Arts
  • Must be able to obtain Food Manager Certification within 6 months of hire

Responsibilities

  • Assist with the preparation and service of meals according to approved and nutritional guidelines.
  • Assist with coordinating daily kitchen operations and workflow.
  • Assist with supervision of kitchen staff during assigned shifts and provide direction as needed.
  • Assume Kitchen Coordinator duties in their absences.
  • Maintain security counts of utensils and kitchen tools before, during, and after meals.
  • Assist with preparation and distribution of residents snacks.
  • Assist with inventory management, including food, supplies, and cleaning products.
  • Conducts routine inventory counts and notify the Kitchen Coordinator when supplies need replenishment.
  • Assist with receiving, storing, and rotating food products in accordance with food safety standards.
  • Ensure proper sanitation of food preparation, dining, storage, and dishwashing areas.
  • Monitor compliance with City- County Health Department regulations, Child Nutrition Program requirements, and facilities policies.
  • Assist with ordering food and kitchen supplies in accordance with food safety standards.
  • Perform routine inspection of kitchen equipment and report maintenance needs.
  • Assist with maintaining records related to meal served, inventory, temperatures, sanitation, and inspections.
  • Utilize computer systems for inventory tracking, food catering, meal reporting, and documentation.
  • Participate in staff training and orientation activities.
  • Maintain a safe and secure kitchen environment within Juvenile Detention setting.
  • Perform other duties as assigned.
