About The Position

AIP is looking for an Assistant Food Service Manager to work in Brownsville, TX. The Assistant Food Service Manager is a corporate management position. The AFSM assists the Food Service Manager with managing, directing, and overseeing food service operations in support for the contract site. The AFSM coordinates the activities of the food service staff ensuring ACA, PBNDS, OSHA and all applicable laws, regulations, and procedures are adhered to.

Requirements

  • High school diploma or equivalent (GED) and possess a valid Food Safety Manager Certification.
  • Possess a valid driver’s license.
  • Three (3) years of previous experience as a supervisor or manager for large quantity cooking in an institution, military, commercial kitchen, or similar setting.
  • Skilled in measuring and mixing ingredients according to recipes and calculating number of servings.
  • Three (3) years of previous experience in purchasing food supplies and equipment.
  • Three (3) of previous experience training employees and conducting performance evaluations.
  • Two (2) years of previous experience as a Cook II, Cook Supervisor or equivalent in a detention facility, jail, or prison.
  • Knowledge and experience with PBNDS, ACA, PREA, OSHA and other federal regulations.
  • Knowledge of union CBA, Akima policies and procedures, PIDC and ICE policies and procedures.
  • US citizen or person lawfully admitted into the United States for permanent residence.
  • Must have resided in the US for the last five (5) years (unless abroad on official US government duty).
  • Must be able to obtain a favorable Suitability for Employment determination through ICE.
  • Must have a Social Security card issued by the Social Security Administration.

Responsibilities

  • Supervises and coordinates activities to ensure project delivery.
  • Monitors schedules and timeline of delivery of project.
  • Enforces project standards by facilitating problem solving and project resourcing.
  • Monitors budgets, interim milestones, and final deliverables.
  • Partners with project managers to develop and execute business plan, facilitate collaboration to achieve project objectives.
  • Leads and directs the work of other employees.
  • Supervise the Cook II Crew Leaders, Cook II, Cook I staff and food service Warehouse Operator.
  • Ensure proper inventory levels are maintained in the dry storage and cold/freezer storage areas.
  • Ensure that the ICE approved menus and diets are adhered to.
  • Ensure the sanitation of the exterior and interior of the food service department is always maintained by following the established cleaning schedule.
  • Assist with developing food service training plans for staff and detainees.
  • Ensure all training is documented and filed for quality assurance.
  • Ensure staff adhere to key, chemical and tool control procedures in accordance with established policies and procedures.
  • Ensure staffing levels is maintained in accordance with the contract staffing plan to sustain an ongoing food service operation.
  • Ensure that detainee therapeutic and/or religious diets are made in compliance with the Chaplain and/or IHSC orders.
  • Ensure staff and detainees are working in a safe environment by adhering with OSHA, PIDC, and Akima safety regulations.
  • Ensure food service staff is adhering to ACA and PBNDS standards in food preparations.
  • Ensure that food service contractual requirements are strictly adhered to.
  • Administer staff training, professional development, evaluation, and discipline.
  • Interview potential new hire and promotable Cook Supervisors.
  • Ensure that all FLASH and incident reports are submitted in accordance with established policy and procedures, including photos, statements, and follow-up reports.
  • Report all significant accident/injury incidents to the FSM, AFD, COR and ICE Duty Officer.
  • Actively promote a robust safety culture amongst subordinate staff.
  • Report all damaged or unserviceable equipment to the FSM.
  • Submit maintenance work orders on ICE owned equipment and coordinate repairs or replacement of Akima owned equipment.
  • Issue written memos to staff concerning safety awareness, hazard abatement and performance issues.
  • Conduct employee disciplinary investigations, ensuring union representation of union covered employees.
  • Review and submit employee disciplinary action reports to the FSM for review.
  • Hold Step 1 Grievance meetings with the Union and provide a written response.
  • Review post assignments for the following day and ensure personnel are fairly.
  • Conduct performance appraisals for Cook II Crew Leaders, and Cook I.
  • May be designated the acting FSM during absence.
  • Prepare and submit required food service reports and deliverables accurately and in a timely manner.
  • Participate in reviewing food service policies and procedures and submit recommendations.
  • Assist food service staff during peak food production, or when short of staff.
  • Perform other duties as directed by PIDC management.
