Our Taiwanese restaurant concept is deeply rooted in tradition and craftsmanship. Our specialty, Xiao Long Bao (小籠包), is carefully crafted using traditional techniques to deliver an authentic dining experience. As part of Kizuki International LLC, Supreme Dumplings continues to expand across multiple markets while maintaining our commitment to culinary excellence, operational consistency, and exceptional hospitality. The Assistant Director of Operations is a senior operational leader responsible for overseeing and supporting Supreme Dumplings locations nationwide, driving financial performance, operational excellence, and leadership development across the brand. Reporting to the Director of Operations, this position works directly with District Managers, General Managers, Regional Kitchen Managers and restaurant teams to ensure operational standards are consistently executed. Based at our Redmond Corporate Office, this is a hands on, field focused leadership position requiring national travel, a strong operational presence, the ability to identify and correct performance gaps, and a commitment to developing high performing restaurant teams.

Requirements

  • 7+ years of restaurant management experience, including significant experience in multi unit or high volume restaurant operations.
  • Proven experience overseeing multiple restaurants and leading General Managers or District Managers.
  • Strong financial acumen, including P&L management, labor controls, budgeting, and profitability improvement.
  • Demonstrated ability to develop leaders, implement accountability systems, and improve underperforming locations.
  • Strong understanding of both front of house and back of house restaurant operations.
  • Excellent communication, organizational, analytical, and problem solving skills.
  • Ability to balance strategic planning with direct, hands on operational execution.
  • Ability and willingness to travel nationally on a regular basis, including extended travel as business needs require.
  • Ability to work from the Redmond, WA Corporate Office when not traveling.
  • Ability to work flexible schedules, including evenings, weekends, and holidays as business needs require.
  • Ability to perform essential job functions with or without reasonable accommodation.

Nice To Haves

  • Previous experience as a District Manager, Regional Manager, Director of Operations, or similar multi unit leadership role.
  • Experience supporting restaurant openings and multi market operations.
  • Experience within Asian cuisine, full service dining, or high volume restaurant concepts.
  • ServSafe Certification or equivalent food safety certification.
  • Bilingual in English and Spanish or Cantonese preferred, but not required.

Responsibilities

  • Oversee daily operations and performance across assigned Supreme Dumplings locations nationwide.
  • Lead, coach, and hold District Managers and General Managers accountable for operational standards and business results.
  • Conduct regular restaurant visits, operational audits, and performance reviews.
  • Identify operational challenges, implement corrective action plans, and ensure sustainable improvements.
  • Support new restaurant openings, operational transitions, and brand expansion initiatives.
  • Drive restaurant profitability through disciplined labor management, food cost controls, and operational efficiency.
  • Analyze P&L statements, sales trends, labor performance, and controllable expenses.
  • Ensure accurate sales forecasting, staffing plans, inventory management, and financial reporting.
  • Identify opportunities to improve margins, increase productivity, and eliminate unnecessary expenses.
  • Hold restaurant leadership accountable for achieving established financial targets.
  • Recruit, develop, mentor, and evaluate District Managers, General Managers, and emerging leaders.
  • Establish clear performance expectations and follow through on measurable results.
  • Build leadership succession plans and strengthen internal management development.
  • Foster a culture of accountability, teamwork, professionalism, and continuous improvement.
  • Address performance concerns proactively while maintaining a positive and respectful workplace.
  • Ensure consistent execution of Supreme Dumplings hospitality, food quality, and service standards.
  • Monitor guest feedback, restaurant evaluations, and service performance.
  • Partner with restaurant leadership to resolve recurring guest experience challenges.
  • Work directly alongside restaurant teams to reinforce standards and improve execution.
  • Protect brand consistency across all locations.
  • Partner with Culinary Leadership to ensure recipe adherence, product quality, portion consistency, and food safety.
  • Verify proper execution of kitchen procedures, production standards, and inventory controls.
  • Identify opportunities to improve kitchen efficiency, throughput, and overall restaurant productivity.
  • Support the implementation of new menu items, equipment, systems, and operational procedures.
  • Partner with Culinary, Human Resources, Training, Facilities, Marketing, Finance, and IT to support restaurant performance.
  • Ensure company initiatives are implemented effectively and consistently across all locations.
  • Communicate operational priorities, performance gaps, and corrective action plans to senior leadership.
  • Provide regular updates on restaurant performance, staffing, financial results, and operational improvement initiatives.
  • Ensure restaurant compliance with applicable federal, state, and local labor regulations across all operating markets.
  • Maintain food safety, sanitation, workplace safety, and health department standards.
  • Ensure consistent execution of company policies, procedures, and operational requirements.
  • Proactively identify compliance risks and implement corrective action.
