About The Position
Supervises activities related to the management of the Central Kitchen (Cook Chill) facility including menu planning, food manufacturing and preparation, and sanitation. Ensures compliance with applicable laws, rules, guidelines including those promulgated by the Texas Commission on Jail Standards, Texas Department of State Health Services and the Dallas County Health and Human Services Department, and the Texas Department of Agriculture. Functions as Division Commander in absence of the Director.
Requirements
- Supervisory experience
- Experience in food service management
- Knowledge of sanitation standards
- Familiarity with regulations from Texas Commission on Jail Standards, Texas Department of State Health Services, Dallas County Health and Human Services Department, and Texas Department of Agriculture
Responsibilities
- Supervise activities related to the management of the Central Kitchen (Cook Chill) facility
- Oversee menu planning, food manufacturing and preparation, and sanitation
- Ensure compliance with applicable laws, rules, and guidelines from relevant state and county departments
- Manage staff of approximately 20, including Production Manager, Sergeants, Cooks, Detention Service Officers, and inmate workers
- Act as Division Commander in the absence of the Director
