This role involves operating various equipment in the department, including combo lifts, cabbage shredder, flume systems, and dicer. The operator will be responsible for assembling and disassembling equipment, practicing strict sanitation and GMP practices to ensure food-safe products. Key duties include gathering, prepping, and weighing ingredients, tracking inventory of fresh ingredients, calculating daily vegetable production needs, and maintaining run sheets for cost accounting. The position also requires documenting environmental concerns for QA and USDA, providing accurate documentation for quality, production, and sanitation, and communicating production needs to salad production areas. Monitoring Tsunami concentrations and temperatures for the Flume System and gathering samples for Quality Control are also essential. The role includes manually trimming fresh vegetables and performing other duties as assigned, with the flexibility to work in other areas as needed or requested.
