About The Position

To efficiently and effectively operate machinery and equipment in a tortilleria, producing high-quality tortillas and other related products while maintaining a safe and clean work environment. This role involves managing the entire tortilla production process, from raw ingredients to finished products, ensuring consistent quality and adherence to food safety standards.

Requirements

  • Minimum of 1 year experience operating a tortilla machine
  • Experience in food production or manufacturing environment
  • Experience with quality control processes
  • Experience maintaining a clean and sanitary work environment
  • Ability to operate and maintain tortilla machines

Responsibilities

  • Operate and monitor tortilla-making machines, including mixers, dough sheeters, ovens, and cutters, ensuring proper functioning and adjusting settings as needed to maintain product quality and consistency.
  • Manage the entire tortilla production process, from mixing and preparing dough to baking, cooling, and packaging finished products.
  • Maintain accurate inventory of raw materials (e.g., masa harina, water, salt, oil) and finished products, anticipating needs and communicating with suppliers to ensure adequate stock levels.
  • Adhere strictly to food safety and sanitation regulations, maintaining a clean and organized work area and following established procedures for handling and storing ingredients and finished products.
  • Troubleshoot equipment malfunctions and perform routine maintenance tasks to ensure optimal performance and minimize downtime.
  • Monitor product quality throughout the production process, checking for consistency in size, thickness, texture, and taste, and making adjustments as necessary.
  • Package finished tortillas according to established procedures, ensuring proper labeling and storage to maintain freshness and quality.
  • Maintain accurate production records, documenting quantities produced, ingredients used, and any issues encountered during the production process.
  • Communicate effectively with supervisors and colleagues, reporting any production issues or equipment malfunctions promptly.
  • Follow all safety procedures and guidelines, utilizing appropriate personal protective equipment (PPE) and maintaining a safe working environment.
  • May assist with other tasks as needed, such as cleaning and sanitizing equipment, receiving deliveries, and stocking shelves.
