About The Position

The Grocery Store Sushi Manager oversees all aspects of the in-store sushi department, ensuring high-quality food preparation, food safety compliance, excellent customer service, and profitable department operations. This position is responsible for managing staff, maintaining inventory, controlling costs, and delivering fresh, visually appealing sushi products that meet company standards and customer expectations.

Requirements

  • High school diploma or equivalent.
  • Previous experience in sushi preparation or food service management.
  • Knowledge of sushi-making techniques and ingredients.
  • Understanding of food safety and sanitation requirements.
  • Strong leadership and team management skills.
  • Excellent communication and customer service abilities.
  • Ability to stand for extended periods.
  • Frequently lift and carry up to 50 pounds.
  • Perform repetitive cutting, rolling, and food preparation tasks.
  • Work in refrigerated environments and near food preparation equipment.

Responsibilities

  • Oversee daily sushi department operations.
  • Ensure sushi products are prepared, displayed, and merchandised according to company standards.
  • Maintain product freshness, quality, and presentation.
  • Monitor production levels to reduce waste and maximize profitability.
  • Implement department policies and procedures.
  • Ensure compliance with local, state, and federal food safety regulations.
  • Monitor proper food handling, storage, labeling, and temperature controls.
  • Conduct routine sanitation inspections and corrective actions when necessary.
  • Maintain all required food safety certifications and records.
  • Manage inventory levels and product rotation.
  • Order seafood, produce, rice, packaging, and other supplies.
  • Track inventory costs and minimize shrinkage.
  • Verify deliveries and ensure product quality standards are met.
  • Provide exceptional customer service and resolve customer concerns.
  • Respond to special orders and product inquiries.
  • Promote sushi products through sampling, merchandising, and sales initiatives.
  • Build customer loyalty through quality products and service.
  • Monitor sales, labor costs, and department profitability.
  • Develop strategies to increase sales and improve operational efficiency.
