About The Position

Restaurant Associates, a leading provider of dining and event catering, is seeking a full-time SUSHI CHEF. This role involves preparing and presenting sushi and related food products to customers, offering a unique combination of restaurant, catering, and special event experience. The position requires high-level knife skills and specialized skills associated with sushi preparation, production, and presentation. The Sushi Chef will be responsible for food storage, handling, presentation, portion control, and maintaining appropriate serving temperatures, adhering to all corporate, state, and federal food safety and sanitation procedures. Additionally, the role involves maintaining the sanitation of equipment, supplies, and utensils, cleaning the workstation thoroughly, and keeping display equipment clean. The Sushi Chef will interact with customers to enhance their dining experience, demonstrating a complete understanding of daily menu items and explaining them accurately. This position is crucial for keeping up with peak production and service hours.

Requirements

  • Previous sushi chef experience is required.
  • Proficient knowledge of knife skills and seafood safety is required.
  • The use of a medium weight cut gloves when handling or using knives, peelers, choppers, mandolins or cleaning a slicer.
  • The use of oven mitts, fryer gloves or steamer gloves when handling hot pans from ovens, warmers or steamtables.
  • The use of slip-resistant shoes and proper lifting techniques.

Responsibilities

  • Prepares and presents sushi and related food products to customers.
  • Demonstrates high-level knife skills and special skills associated with sushi prep, production and presentation.
  • Stores foods in designated areas following corporate, state and federal food safety and sanitation procedures.
  • Ensures proper food handling, presentation, portion control and maintenance of appropriate serving temperatures.
  • Maintains sanitation of all equipment, supplies and utensils within work area; cleans workstation thoroughly before leaving the area; keeps display equipment clean and free of debris during meal service to assure compliance with all sanitation, ServSafe, safety, OSHA, production and merchandising requirements.
  • Interacts with customers to enhance dining experience; demonstrates a complete understanding of daily menu items and is able to accurately explain them to customers and associates.
  • Keeps up with peak production and service hours.
  • Performs other duties as assigned.
