About The Position

Glenwild Restaurant and Clubhouse is seeking an experienced Sushi Chef for our high-end Japanese menu. Applicants must be able to fillet fish, prepare all pertinent ingredients (including sushi rice), and maintain a clean/organized work space. Our menu is grounded in traditional preparation, but creativity and flexibility are a must, as we cater to the demands of our exclusive club members. Additionally, all sushi is prepared in front of an audience, so maintaining a professional appearance and good communication skills are required. Hours are Wednesday through Sunday 1:00-9:00pm, with some room for flexibility.

Requirements

  • High school diploma or GED.
  • Advanced knife skills
  • Experience in high end sushi and Japanese dining.
  • Food Handlers certification and training.
  • Good communication and customer service skills.
  • Ability to be flexible and work under pressure.
  • Meal planning and multi-tasking skills.

Responsibilities

  • Preparation of sushi rice and ingredients.
  • Filleting and cutting sushi fish and proteins.
  • Maintaining a clean and organized work space--in accordance with health codes and guidelines.
  • Preparing sashimi, nigiri-sushi, and maki-sushi (rolls).
  • Maintaining proper inventory and portion control.
  • Help with neighboring food station, when needed.
  • Communicating with front of house, to ensure excellent customer experience.
