Requirements

  • Minimum of 3 years of experience as a Sushi Chef in a high-end restaurant, luxury hotel, or fine dining establishment.
  • Extensive knowledge of traditional Japanese sushi techniques and modern sushi trends.
  • Strong knife skills and expertise in handling fresh seafood and other sushi ingredients.
  • Attention to detail and a passion for presentation, ensuring every dish is a work of art.
  • Ability to work efficiently in a fast-paced, high-pressure environment while maintaining precision.
  • Understanding of food safety and sanitation standards, particularly related to raw seafood handling.
  • Strong communication and teamwork skills.
  • Availability to work flexible shifts, including evenings, weekends, and holidays.

Responsibilities

  • Prepare and execute a variety of sushi dishes, including nigiri, sashimi, and specialty rolls, with precision and artistry.
  • Ensure the highest quality and freshness of all sushi ingredients, following proper handling and storage guidelines.
  • Maintain consistency in taste, portioning, and presentation to uphold the hotel’s luxury dining standards.
  • Work closely with the culinary team to develop innovative sushi menu offerings and seasonal specials.
  • Ensure all food preparation areas, tools, and workstations are clean, organized, and compliant with food safety and sanitation standards.
  • Monitor inventory levels, assist with ordering fresh seafood and other ingredients, and minimize waste.
  • Engage with guests when necessary, offering insights into sushi ingredients and preparation techniques.
  • Collaborate with the front-of-house team to ensure timely service and an exceptional guest experience.
