About The Position

We are seeking a skilled and passionate Sushi Chef/Oyster Shucker to join our team. This role involves preparing sushi, oyster, and seafood items, ensuring quality and freshness, and maintaining high standards of food safety and sanitation. The ideal candidate will have a strong interest in learning proper oyster handling and presentation, possess excellent knife skills, and be able to work effectively in a fast-paced environment. You will also be responsible for providing excellent customer service and collaborating with the kitchen team.

Requirements

  • Previous sushi, raw bar, oyster shucking, or seafood prep experience is preferred, but not required.
  • Strong knife skills.
  • Attention to detail.
  • Interest in learning proper oyster handling, shucking, and presentation.
  • Ability to follow health and safety standards for handling raw seafood, including proper oyster storage, temperature control, sanitation, and cross-contamination prevention.
  • Excellent communication skills, both verbal and written.
  • Ability to follow instructions accurately and efficiently.
  • Capacity to work in a fast-paced environment while maintaining food quality and sanitation standards.
  • Must be able to work flexible hours, including evenings, weekends, and holidays.

Responsibilities

  • Prepare sushi, oyster, and seafood items according to recipes, specifications, and restaurant standards.
  • Handle, store, clean, and prepare fresh fish, oysters, shellfish, and other seafood products safely and properly.
  • Shuck oysters safely, cleanly, and efficiently for service.
  • Check sushi ingredients, oysters, shellfish, and seafood for quality, freshness, and proper handling before serving.
  • Maintain proper storage, rotation, labeling, and temperature standards for sushi, oysters, and seafood items.
  • Plate and present sushi, oysters, and seafood dishes according to restaurant standards.
  • Follow food safety and sanitation standards at all times, including proper seafood handling and cross-contamination prevention.
  • Collaborate with kitchen team members to support timely and efficient service.
  • Provide excellent customer service and interact with guests in a friendly and professional manner.
