This role oversees staff responsible for the cleanliness of kitchens and back-of-house areas, manages weekly deep cleaning of equipment, orders linen and chemicals, and maintains a friendly and professional image. The position requires ensuring impeccable guest service, supervising cleaning to meet health department standards, assisting in staff training and supervision, conducting daily inspections of back-of-house areas, ensuring equipment and floor cleanliness, training staff on chemical use and cleaning methods, delegating duties, maintaining stock of operating supplies, overseeing trash disposal, and ensuring restaurants are properly supplied with dishes and silverware. The role also involves following established procedures and policies of Oaklawn Racing Casino Resort.
