This team member is responsible for maintaining a high standard of cleanliness and sanitation in the kitchen.   • Must be able to lift/carry/push/pull up to 50 pounds.

Responsibilities

  • Promptly and carefully sort soiled ware so it can be properly put through the dish or pot machine.
  • Quickly wash all ware and replace it in the storage areas as designated.
  • Keep the dish machine properly cleaned and filled with water per hotel standards.
  • De-tarnish/polish silver for proper appearance.
  • Clean kettles, tilt skillets, pots, and pans promptly and completely so cooks can carry out their work.
  • Transport and clean cooking utensils and service ware to provide cooks, banquet servers, and food servers with appropriate equipment for guests' dining experience.
  • Performs duties to maintain kitchen work areas and restaurant equipment and utensils in clean and orderly condition.
  • Sweep and mop floors.
  • Washes worktable, walls, refrigerators, and meat blocks.
  • Separates and removes trash and garbage, placing it in designated containers.
  • Steam-cleans or hoses out garbage cans.
  • Scrapes food from dirty dishes and either washes them by hand or places them on racks or conveyor to the dishwashing machine.
  • Run glasses through the dishwasher twice.
  • Puts away and rotates stock.
  • Put away all clean utensils and stock in designated areas.
  • Cleaning and sanitizing all kitchen equipment, including stoves, grills, and prep tables.
  • Cleaning and sanitizing all kitchen areas, floors, and walls.
  • Report inventory of supplies and cleaning chemicals to the supervisor.
  • Following safety guidelines and proper usage of all cleaning chemicals before, during, and after usage, which includes proper storage of all chemicals when not in use.
  • Report kitchen equipment that is not in working order to the assigned supervisor/manager.
  • Assist kitchen staff when needed.
  • Assist Stewarding Supervisor in organizing and maintaining all inventories of china, glass & silver.
  • Attend department meetings and other company-required training.
  • Complete other duties assigned by management.
