About The Position

The Steakhouse Captain is responsible for coordinating food orders for servers on the kitchen line and efficiently serving ordered items to each guest table. This role involves greeting customers with a friendly smile and utilizing suggestive selling techniques. The captain must possess the ability to memorize and execute required service and ordering steps with a friendly and professional attitude, using the guest's name whenever possible. This includes pronouncing the entire wine list and menu items, conducting beverage and wine service techniques such as decanting wine and refilling beverages, and performing French service. The captain must implement fine-dining food serving standards and silverware placement, and accurately describe all steakhouse menu items, daily specials, and pricing. They must make appropriate meal/beverage pairing recommendations and use suggestive selling techniques. The role requires accurately entering menu items into the POS system in the correct sequence for proper preparation and delivery from the kitchen. Serving food and beverages using both hand and tray service methods is essential, along with the ability to use large trays, cocktail trays, and bus tubs. The captain must observe and anticipate guest needs, checking on guests regularly, and delivering/removing items in a timely and accurate fashion according to department standards. Maintaining a clean section free of debris and maintaining visual contact of the entrance to provide timely service are also key. Completing assigned side work, running side work, and additional daily tasks are required. The position demands exercising sound judgment and decision-making skills when handling guest and Team Member opportunities, and informing immediate supervisors of situations that cannot be handled directly. Knowledge of casino safety procedures and emergency evacuation procedures is also necessary.

Requirements

  • 2 years or more experience food and beverage service in a four diamond resort or steakhouse setting.
  • Ability to obtain the required work cards for the jurisdiction in which the property is located.
  • Ability to communicate effectively with guests, team members and management in both written and verbal form.
  • Ability to demonstrate leadership skills, sound judgment, logical decision making and manage time effectively with minimum supervision.
  • Ability to communicate effectively with waiters to take orders and perform secondary service functions required by menu items.
  • Must be able to obtain all required work cards.
