About The Position

MegaMex Foods is seeking a Spice Room Lead to join one of the fastest growing Mexican food companies in the US. Our purpose is to Reimagine Mexican Flavors, bringing unique and traditional Mexican flavors to tables worldwide. The Spice Room Lead ensures the availability, accuracy, and proper handling of ingredients required for production by verifying formulas, lot numbers, and by managing pre-batching and staging activities. This role supports production efficiency by maintaining compliance with food safety standards (including allergen control), resolving discrepancies with warehouse teams, and overseeing documentation and traceability. Additionally, the position provides leadership by training, supervising, and guiding spice room personnel.

Requirements

  • Previous production lead experience in a food manufacturing environment is a plus.
  • Ability to handle multiple projects in a fast-paced and limited timeframe while remaining detailed oriented, reliable, and organized.
  • Strong leadership abilities.

  • Basic math skills.

Responsibilities

  • Review formulas scheduled for kitchen area production lines.
  • Distribute production schedules to the spice room team.
  • Verify ingredients and quantities delivered from the warehouse against the daily picking list from the BC system.
  • Ensure all ingredients required by formulas are available for pre-staging.
  • Verify lot numbers for ingredients, comparing physical lot numbers with system records and communicating discrepancies to the warehouse team.
  • Provide job cards to the team for lot traceability.
  • Confirm all required ingredients are on-site before starting the weighting process.
  • Report ingredients, bags, or pallets that do not meet requirements (e.g., broken bags, expired lots).
  • Follow the Allergen color code.
  • Prepare pre-batches according to recipes and schedules.
  • Build containers in BC according to job cards and lot numbers.
  • Print labels from BC and identify batches.
  • Manage returned spices, batches, and containers from the kitchen.
  • Store unused food products in designated areas and maintain a clean work area.
  • Follow the ingredient return process with the warehouse team.
  • Verify that paperwork is completed properly and generate reports.
  • Train and supervise new employees.
  • Assist in other areas as assigned by supervisor or manager.
