About The Position

The Specialty Cook is expected to prepare, cook and assemble high quality dishes and show mastery of culinary skills relevant to their assigned outlet. Specialty Cooks are assigned to a primary outlet but may be required to assist in other outlets when needed or at special events.

Requirements

  • Minimum of two years of cooking experience at a mastery/expert level.
  • Must be able to demonstrate mastery in the sauté, grill, and all other Lone Wolf stations.

Nice To Haves

  • Culinary degree or relevant certification is preferred.
  • A minimum of two years of relevant cooking experience in a Steak House dining environment is preferred.
  • ServSafe® certification or ability to become certified is preferred.

Responsibilities

  • Ensure that each guest receives outstanding service by creating a friendly environment and following Jackson Rancheria Guest Service Guidelines.
  • Prepares, seasons, finishes, and garnishes all food in kitchen preparation in accordance with established recipes to maintain consistency in the preparation and presentation of dishes.
  • Exhibit knowledge, understanding, and application of various cooking techniques.
  • Exhibit preparation and knowledge of base sauces, stocks, and soups.
  • Work closely with the kitchen team to coordinate and expedite orders, ensuring smooth communication and teamwork in a high-paced kitchen environment.
  • Quickly adapt to changes in menu, recipes, and procedures, demonstrating flexibility and creativity in the face of evolving culinary demands.
  • Follows all recipes, specs, and control procedures.
  • Operate kitchen equipment including slicer, steamer, deep fryer, ovens, broiler, grill, mixer, kettle, flat top, slow cookers, griddles, braisers, ranges, salamander broiler, combination ovens, knives, and other equipment for food preparation.
  • Prepare order lists for recipe preparations.
  • Perform all assigned side work to include replenishing/restocking work station with supplies.
  • Check station before, during, and after shift for proper set-up and cleanliness.
  • Maintains a clean and sanitary area at all times in full accordance with health regulations
  • Adhere to control procedure for food costs and quality.
  • Abide by all health codes and hand washing guidelines and encourage team members to do the same.
  • Assists guests with special requests.
  • Responsible for conducting all responsibilities in a professional and ethical manner
  • Assist in the training of junior kitchen staff, sharing your knowledge and skills to maintain a cohesive and efficient team.

Benefits

  • Shift Differential: Non-Exempt employees will receive a $1.00 per hour shift differential for any hours worked between 10:00pm and 6:00am.
