The Specialty Cook II (described in the posting as Wok Cook—Noodle Bar) works under the direction of the Sous Chef and provides superior service to internal and external customers. The role prepares foods listed on the menus for grilling, frying, broiling, or pantry service, ensuring that dishes are attractively presented and cooked to customer specifications. The cook recognizes and applies sauces to menu entrees, maintains a clean workstation, and assists coworkers to support efficient line operations. Other duties may be assigned. The position works in a hectic, fast-paced casino environment that may be crowded and noisy, with varying levels of kitchen heat and noise. Hazards may include wet floors and the use of heavy-duty cutlery, knives, and choppers. The employee uses standard kitchen equipment, including slicers, choppers, mixers, and grinders, and must be able to review recipes, assess whether food is properly cooked, move around the work area, stock and retrieve supplies, and communicate with customers and employees. The role requires flexibility to work varying shifts and schedules as needed. Candidates need basic food-preparation knowledge and line-work experience. These skills are typically acquired through at least one year of prior experience as a Cook Trainee or coffee shop line cook, and/or completion of a culinary arts degree or recognized apprenticeship. The employee must be able to obtain and maintain licenses and certifications required by federal, state, and gaming regulations.
