The Sous Chef is responsible for supervising kitchen staff in the daily preparation of various dishes, recommending menu items, and planning special events. This role involves hands-on food preparation, informing wait staff about menu items, managing kitchen inventory, and ensuring proper staffing for productivity and quality. The Sous Chef also handles administrative duties such as preparing reports, scheduling employees, and costing menus, as well as expediting food orders during peak hours and maintaining organization in storage areas. Additionally, the Sous Chef develops daily specials and seasonal menus, creates innovative dishes, participates in culinary brainstorming, researches new recipes and techniques, and oversees the artistic presentation of dishes to meet high club standards. Managerial duties include managing a staff of over 16 team members, ensuring high performance and adherence to club standards, training and developing kitchen staff, holding team members accountable for quality and safety, conducting performance evaluations, assisting with scheduling and labor management, ensuring compliance with health and safety regulations, attending BEO meetings, and managing buffet setups for events. The role also involves performing additional duties as assigned, treating members and guests with respect, and following club policies and procedures.
