The Sous Chef leads and inspires the kitchen team whilst supervising food preparation as well as coordinating the daily tasks within the kitchen based on the direction of Executive Chef and Executive Sous Chef. Lead a team through food preparation while coordinating the work of Cooks and Dishwashers Supervises the training and cross-training of kitchen personnel Researches, recommends and implements new policies and procedures relating to food preparation Assist the Executive Chef and Head Chef with performance management/ reviews and seasonal staffing levels Meet or exceed forecasted/budgeted COGS/LTR and operational budgets (expenses) Supervises, expedites and participates in food preparation, in accordance with standards of quality, quantity, taste and presentation Quality check food for taste, temperature and visual appeal Supervises the presentation and return of food Stores food items in refrigeration boxes to prevent contamination following Alberta’s OH&S standards Ensures the execution of guest special requests and accommodating food allergy, preferences and intolerances. Create and contribute menu items and offerings Acts with integrity, honesty and knowledge that promotes the culture, values and missions of Pursuit Flexible to work in various locations

Requirements

  • Minimum 3 years management experience in high volume food service and restaurant operations
  • Ability to manage in a diverse environment with focus on customer service
  • Experienced and proficient in the latest sanitation and HACCP standards.
  • Excited by the idea of living and working in a remote (yet very social) environment
  • Ability to control costs- COGS, Labour and Expenses
  • Standard First-Aid or higher an asset
  • Computer literacy, including word processing
  • Proven leadership experience
  • Organizational skills and ability to implement culinary program and brand development
  • Comfortable working on your feet for extended periods of time
