About The Position

The Sous Chef is responsible for the daily shift production of product for the outlet. This role requires a strong ability to train, mentor, coach, teach, and guide team members. The Sous Chef must have a willingness to be approachable to all members of property management and team members, and maintain an even temperament under stressful situations.

Requirements

  • High School diploma or GED
  • 2 years culinary degree
  • 3 years’ experience in multi outlet facility
  • Experience in supervising and training staff
  • Be able to obtain/maintain Eastern Shawnee Tribe of Oklahoma gaming license
  • Server Safe certified
  • Ability to maneuver in the casino, visual acuity to observe and react to handle customer questions and complaints.
  • Must be able to stand and/or walk for 7 1/2 hours per day.
  • Have good dexterity in fingers, to be able to hold and manipulate product or machinery.
  • Able to work in hot and cold temperature extremes.
  • Be able to lift up to 50lbs and push or pull a flatbed cart weighing up to 300lbs.
  • Must be able to stretch, bend, kneel, twist and reach.
  • Must be able to taste, feel, smell, see and walk and be able to read, write and speak basic English
  • Strong ability to train, mentor, coach, teach and guide team members.
  • Must have a willingness to be approachable to all members of property management and team members.
  • Must have an even temperament under stressful situations.

Responsibilities

  • Trains, supervises and motivates cooking staff
  • Coordinates activities of cooks and other kitchen personnel engaged in preparing and cooking foods
  • Maintains inventory controls
  • Maintains a sanitary and safe kitchen/storage environment for all team members
  • Develops and standardizes production recipes to ensure consistent quality
  • Develops quality standards for food quality and presentation
  • Checks food quality, presentation, and portion control before meals
  • Interact with restaurant manager
  • Assisting with prepping of banquet food
  • Serves as a role model for team members through teamwork support, attention to detail, quality control, and interactions with guests and co-workers
  • Participates in the initiation of personnel actions including interviews, training, performance reviews, promotions and disciplinary actions.
  • Assists in maximizing employee morale through leading by example.
  • Attends departmental and property meetings as required.
  • Prepares weekly schedule to ensure adequate staffing is scheduled for business needs.
