Requirements

  • Skilled in the preparation of vegetables, meats and fish
  • Knowledge of buffet preparations; line cooking, soups and sauces
  • Ability to perform basic supervisory skills
  • Must comply with qualifications and essential functions for Lead Cook position
  • Hair must be restrained
  • No jewelry allowed
  • Must wear black, non-skid type shoes provided by you

Responsibilities

  • Preparing hot and cold foods
  • Ordering all product
  • Scheduling of staff
  • Overseeing all prep
  • Developing less skilled positions
  • Fulfilling a leadership role
  • Meeting with department supervisors daily to review staffing, food requirements and special events
  • Producing accurate quantities of food, following the recipes and philosophies of Stonewall Resort
  • Following production sheets, preparing and updating all CEOs to ensure efficient ordering of food and accurate production
  • Using products to their full potential, minimizing waste and using proper food rotation principles
  • Inventorying par stocks and ordering appropriate quantities of food for upcoming business
  • Producing Inventory Reports monthly on the 1st of the month
  • Reporting inventory to Executive Chef
  • Overseeing all production pertaining to shift on duty
  • Communicating effectively with peers and supervisors
  • Flexibility in dealing with business levels and front of house
  • Handling special requests and complaints
  • Coordinating special events with Conference Services and Front of House Management
  • Complying with all sanitation standards and health department regulations as outlined in training manual
  • Following policies and procedures of Local health code regulations and Benchmarks Internal Sanitation Audit
  • Knowledge of proper use and following correct procedure for chemical usage in the kitchen
  • Assisting in the training of new employees utilizing the 90 training checklist
  • Being at station in uniform ready to work at the time shift starts
  • Complying with grooming standards as outlined in Employee Handbook and training manual for kitchen employees
  • Wearing proper uniform as provided by Stonewall Resort at all times
  • Wearing black, non-skid type shoes provided by you
  • Leaving work area clean and sanitized at end of each shift
  • Carrying out the policies and procedures of Stonewall Resort and Benchmark Hospitality International while maintaining the highest degree of professionalism and teamwork atmosphere as per standards of service
  • Performing personnel-related functions such as coaching, counseling, and discipline
  • Preparing documentation as outlined in the employee handbook
  • Following safety procedures to ensure a safe working environment
  • Providing assistance in other job classifications as determined necessary by immediate superior
